Have you ever heard the name” MOHANTHAL”?
Let me introduce you to HOW TO MAKE MOHANTHAL.
MOHANTHAL is a sweet made out of Gram flour or Besan.
The uniqueness of this sweet is that it is granular in texture.
This can be called a traditional sweet of Gujrat, in INDIA.
This is very easy to make sweet, too delicious to eat and so is very common in festivals like HOLI, DIWALI, etc.
There are many sweets made from gram flour or Besan.
It can be mysoor pak, besan barfi, chakki, and mohanthal.
INGREDIENTS NEEDED FOR MOHANTHAL
- Gram flour or Besan-1 cup
- Milk-1/2 cup
- Sugar-1/3 cup +1tablespoon
- Milk powder-1/4 cup
- Ghee-1/2 cup
- Water-1/3 cup
- Nutmeg powder-1/8th teaspoon
- Cardamom powder-1/4 teaspoon
- Mixed nuts-Cashew, Almonds, and Pistachio-2 tablespoons
Making of the sweet consists of 4 main stages,
- Turning normal fine flour into granular form.
- Roasting of the gram flour.
- Making of sugar syrup.
- finally, setting the sweet Mohanthal
MAKING OF GRANULES OF BESAN for Mohanthal
- Making a granular texture of the Besan is very easy.
- Take the measured quantity of Gram flour and sieve.
- Then, take a big plate and add Gram flour,2 tablespoons of ghee, and 2 tablespoons of milk.
- Combine all of them together, rubbing in between the palms of your hands.
- Now press and keep in a bowl.
- Cover and keep for 10 to 15 mts.
- Now is the time to sieve, and then you get a granular form of flour.
- You can regrind the un-sieved residue and use it.
- Now the granules of flour is ready to go for roasting.
ROASTING OF GRAM FLOUR GRANULES
- Heat a thick-bottomed pan.
- Add the ghee to it and reduce the flame.
- Now add the granular gram flour, to the pan.
- Start roasting the besan, at a low flame, continuously to avoid burning, and get an even roasting and color.
- It almost takes 10-15 mts to get a good color.
- Now add the remaining milk to this and roast.
- You will see the granules start swelling.
- Roast for some more time and when the mix starts leaving the pan and is dry, remove it on the plate and spread to cool.
- Add cardamom powder, nutmeg powder, and 1 tablespoon of mixed nuts and combine all of them together
MAKING OF SUGAR SYRUP
- Keep a thick-bottomed pan on a low flame.
- Add the sugar and water to it.
- Let it boil till it gets 1 and 1/2 string consistency.
- to check put a drop of syrup and bend the plate, if the drop flows, it is not yet done, if it stands like a pearl and does not move or flow down, the syrup is ready.
- Now add milk powder and stir.
- Put off the flame.
SETTING OF THE SWEET MOHANTHAL
- Grease a plate with ghee for setting the sweet.
- Now to the hot syrup add the roasted mix and combine them nicely.
- Pour the mix into the greased plate and allow to set.
- Flatten nicely with a spatula and add cut dry nuts and press them slightly.
- let it cool for an hour and cut them into desired square or diamond-shaped pieces
