MANGO is called the king of all fruits and has several varieties in it. In this season let us make
MUMBAI SPECIAL DESERT, AAMRAKHAND OR MANGO SHRIKHAND. This desert is very
 soft, creamy, rich, delicious, and loaded with lots of nutrition. It goes well with pooris or
 can be taken as a chilled DESSERT.

Let us see the ingredients needed for AAMRAKHAND

  1. Mango-1 big (any sweeter variety)
  2. Sweet and fresh curds(yogurt)-500 ml.
  3. Sugar( powdered)-3 table spoon.or more according to taste.
  4. Milk to soak saffron-2 tablespoon
  5. Saffron strands-5to8.
  6. Almonds-8to10 numbers(sliced)
  7. Pistachio-8 to 10 number(soaked and sliced)
  8. Cardamom -6 to 8 numbers (powdered)

METHOD
 

       PREPARATIONS TO BE MADE FOR MAKING AAMRAKHAND

  • Take 500 ml of fresh curds (sweet). Tie it to a white muslin cloth and hang it to remove extra water.
  • This takes about 2 to 2 and 1/2 hours.
  • You can also use the strainer instead of the cloth.
  • Then press it with a weight(stone or a heavy rolling board)to completely remove water.

  1. Take 3 tablespoons of sugar and powder it in a mixer grinder.
  2. Select fresh sweet and ripe mango. Wash, cut, and make puree.
  3. Soak the saffron in 1 tablespoon of hot milk in a bowl.
  4. Soak the pistachio in a little water for 15 minutes to peel its skin.
  5. Take cardamoms remove skin and grind it to make powder.
  6. Take almonds, and make thin slices in a slicer.

  1. Finally, take a mixing bowl and a whisk to mix.
  2. Take the hung curd in the bowl and beat well.
  3. Add powdered sugar and mix.
  4. Add mango puree and mix nicely so that no lumps are left.
  5. Now add cardamom powder, pistachio slices, and almond slices.
  6. Also, add saffron strands with the soaked milk.
  7. After mixing once more keep in the refrigerator to make it chilled.

NOTE:  In summer keep the curds in the fridge while removing water otherwise it becomes too sour.  Always use fresh and sweet curds for this dessert.
