KACHE AAM KI LAUNJI

Kache aam ki launji, as the name sujjests is made using raw mangoes, which are sour and can not be consumed as it is. It tastes yummy as it is very tangy and can be licked in between any dish to enhance the taste of the dish.
This dish is more common in the northern part of India. This dish has the sourness of raw mango, the sweetness of jaggery, and the spicy and tangy taste of salt, chilly and other herbs.

The unripe raw mangoes are the storehouse of vitamin c, antioxidants, and have a good amount of dietary fiber, which helps in digestion.
Raw mangoes are also good for skin and hair as they keep your body hydrated during the summer. But everything in limit is good, as excessive intake may cause acidity.
Sometimes, raw totapuri aam is so sour that it is difficult to consume. No worries, you can make this yummy kache aam ki launji.
Making this tasty dish is very simple, and it needs only 15 mts at the max.
LET US SEE THE INGREDIENTS NEEDED FOR KACHE AAM KI LAUNJI

INGREDIENTS:-
- Raw mangoes-3 in numbers
- Jaggery-1/4 cup or a little more
- Oil-3 tablespoons
- mustard seeds-1 small teaspoon
- Cumin seeds-1 teaspoon
- Fennal seeds-1 tablespoon
- Carrom seeds-1 teaspoon
- Nigella seeds-(kalaunji)-1 teaspoon
- Fenugreek -1/2 teaspoon
- Asafoetida-1 peanut size
- Red chillies-3-4 small round variety
- Salt-1 small teaspoon
- black salt-1 teaspoon
- Chat masala-1 teaspoon
- Kashmiri red chilly powder-1 tablespoon
- Turmeric-3/4 teaspoon
- Coriander powder-1 teaspoon
- Garam masala-1 teaspoon
METHOD OF PREPARING KACHE AAM KI LAUNJI:-
- Wash, peel, and cut the raw mangoes into pieces as shown, and keep them in a bowl.

- Take a thick kadhai, preferably stainless steel.
- Add 3 tablespoons of oil to it.

- When oil gets heated, add Cumin seeds, fennal seeds, mustard seeds, carom seeds, and fenugreek seeds. Sauté a little and add kalounji and asafoetida.
- Add the red chillies too.

- Now is the time to add raw mango pieces and give them a good mix.

- Now is the time to add salt, chilli powder, turmeric, coriander powder, and garam masala.

- Mix all and add 2 cups of warm water.

- Cover and cook for 3-4 minutes or till the mangoes are soft.

- Now is the time to add jaggery and let it cook.

- Lastly, add chat masala and black salt.

- Few rasinns can be added.
