There is a very easy method of making mango leather and mango rolls
MANGO IS A SEASONAL FRUIT AND HEALTHY IN GENERAL.
Mango is a good source of vitamin c, and thus improves immunity, Iron absorption, and cell growth and repair.
- It has low calories, so can be used when you need to reduce calorie intake.
- Fresh mangoes in moderation are good for all.
- Mangoes have MAGNESIUM, and POTTASIUM, which help in lowering blood pressure and regulating pulse rate.
- Mangoes stabilize the digestive system.
- It gives a healthy glow to the skin.
- It has vitamin A AND BETA CAROTENE WHICH IS NEEDED FOR HEALTHY EYES AND EYESIGHT.

Now let us see the INGREDIENTS,
we need 4 ingredients to make Mango leather rolls
- Mangoes-2-3 ripe (any variety)
- sugar-2-3 tablespoons according to the sweetness of the fruit.
- Cardamom powder pinch
- (little ghee to smear on the plate while setting the mango leather.)
METHOD OF MAKING THE MANGO LEATHER ROLL
- Firstly select fresh, pulpy, juicy, and ripe sweet mangoes.
- Wash and peel them.
- Now cut them into pieces.
- Grind them in a mixer blender to a smooth pulp.
- Make a fine powder of cardamom and keep it ready.
- Smear a plate nicely with ghee and keep it ready.

- Take a thick-bottomed frying pan and heat it on a low flame.
- Now pour the mango pulp into it.
- Add sugar and stir the mixture regularly.
- You will see that the mixture becomes watery when sugar dissolves in it.
- Continue stirring till the mix thickens like jelly. (it may take 10 to 12 mts)
- Add cardamom powder and mix.
- You can add a pinch of black pepper powder if you like while setting.

- Now pour the mixture into a pre-greased plate.
- Then tap the plate to spread the mixture evenly.
- Take a parchment or butter paper and spread the cooked mango mix with a spatula, as thin as possible to make the rolls when dried completely.

Drying of these can be done in different methods.
SUN DRYING- Cover the plate with a thin white cloth and keep it in sunlight till it dries. (1-2 days)
This time depends on the thickness of the mango leather that you have spread.
DRYING UNDER FAN -This takes a little longer time.
DRYING IN MICROWAVE AND AIR FRYER IS ALSO POSSIBLE.-It takes a few hours and you do not need to cook on flame and can add sugar while grinding. you need to pre-grease the plate.
After drying the mango fruit leather, cut it into desired shapes.
The thin roll can be rolled and served, with or without the paper.
