INGREDIENTS NEEDED FOR MAKING SOFT BUN DOSA
- Puffed rice-2 cups
- Semolina-1 cup (thick or thin)
- Sour curds-1 cup
- Oil-1 tablespoon
- Salt-1 level teaspoon
- Fresh Green chilies-4-5 (finely chopped)
- Curry leaves-8-10 numbers (finely cut)
- Mustard seeds-3/4 teaspoon
- Urad dal-1 teaspoon
- Eno fruit salt-1 small packet or 1 small teaspoon
- Plain water-1 tablespoon
- Plain water-1 cup (for batter)
PREPARATIONS NEEDED TO BE DONE FOR SOFT BUN DOSA
- take a mixer jar and grind the Puffed Rice.
- Take a mixing bowl and add Semolina to it.
- Add the ground Powder Puffed Rice, Salt, and curds to the mixing bowl.
- Combine them all to form a smooth and thick batter.
- You may need 3/4 cup to 1 cup of plain water for a smooth batter.
- Leave for 5 minutes to rest.
- Keep a frying pan, add oil to it, and keep on a low flame.
- Now add mustard seeds, hing (asafoetida), and Urad dal.
- When done, add the chopped green chilies & curry leaves.
- Now mix this garnishing with the Batter and give it a good mix.
- Just before making Dosa, add the fruit salt and a tablespoon of water.
- Now mix it lightly with the Batter and you will see that the Batter becomes very light and smooth.
- The batter of SOFT BUN DOSA IS READY FOR USE.
method of making soft bun dosa
- Keep a deep frying pan to heat on a low flame. A deep frying pan is preferred to get the proper shape of BUN DOSA.
- When the pan gets heated, smear some oil on the bottom and sides.
- Now pour a big ladle full of batter into the pan.
- Cover the pan for 1 minute and let the dosa cook.
- Now carefully flip the Dosa.
- Put a few drops of oil on the sides of Dosa.
- After a minute, this side also gets roasted.
- Remove on a serving plate, with chutney.
- Ridge gourd- 1 medium (chopped)
- Fresh coconut-3-4 tablespoon
- Fried grams-2 tablespoons
- Green chilies-2-3 numbers
- Fresh coriander leaves-a handful
- Curry leaves-5-6 in numbers.
- Ginger-1 inch piece
- Tamarind-1/2 lime size (soaked in water)
- Salt- 1/2 teaspoon or more (acc to taste)
- Oil- 1 tablespoon
- Urad dal-1 teaspoon
- Mustard seeds-3/4 teaspoon
- Asafoetida- 1 pinch
- Cury leaves-8-10 numbers.
- Select a tender and fresh Ridge gourd.
- Wash and cut in the following way.
- (Taste it, before using, because sometimes it is bitter. Do not use if so.)
- After cutting the RIDGE GOURD, wash and grate Ginger and fresh Coconut.
- Now in a skillet take 1 teaspoon of oil and add all the chutney ingredients, i,e. chopped Ridge gourd, Green chilies, fried grams.grated Coconut. tamarind, grated ginger, Fresh coriander, and Curry leaves.
- Grind the chutney in a grinding jar.
- Add little water and Salt. while grinding.
- Before serving it needs garnishing.
- Oil- 1 tablespoon
- Mustard seeds-3/4 teaspoon
- Urad dal-1 teaspoon
- Hing- 1 pinch
- Curry leaves- few
- Heat a tadka pan and add oil to it.
- When oil gets heated, add mustard seeds, and after it splutters add Urad dal.
- When dal is brown, put off the flame and add curry leaves and hing.
- Put this Garnishing on the Chutney and cover to retain its aroma.
