FLUFFY AND SOFT BUN DOSA

HELLO FRIENDS,
Today, I will be showing you a very quick Recipe for SOFT BUN DOSA.
At times it happens, we are in a situation when some unexpected guest visits our house and we have a shortage of time to get prepared for their Breakfast.
At that time we are in search of recipes that are quick, tasty, and appetizing.
This is a BUN DOSA, which is very soft and fluffy like a Bun and so named as BUN DOSA.
But we do not use any Bun while making this recipe.
Instead, we will be using, Puffed Rice and Semolina as the main ingredients.
Puffed Rice or Murmura is a Rice product and Semolina is a wheat by-product.
We will be using the above ingredients with curds and some fresh herbs and fruit salt.
Let us see the proportions in which we need these ingredients.

INGREDIENTS NEEDED FOR MAKING SOFT BUN DOSA

  1. Puffed rice-2 cups
  2. Semolina-1 cup (thick or thin)
  3. Sour curds-1 cup
  4. Oil-1 tablespoon
  5. Salt-1 level teaspoon
  6. Fresh Green chilies-4-5 (finely chopped)
  7. Curry leaves-8-10 numbers (finely cut)
  8. Mustard seeds-3/4 teaspoon
  9. Urad dal-1 teaspoon
  10. Eno fruit salt-1 small packet or 1 small teaspoon
  11. Plain water-1 tablespoon
  12. Plain water-1 cup (for batter)

PREPARATIONS NEEDED TO BE DONE FOR SOFT BUN DOSA

  • take a mixer jar and grind the Puffed Rice.

  • Take a mixing bowl and add Semolina to it.
  • Add the ground Powder Puffed Rice, Salt, and curds to the mixing bowl.

  • Combine them all to form a smooth and thick batter.
  • You may need 3/4 cup to 1 cup of plain water for a smooth batter.

  • Leave for 5 minutes to rest.
  • Keep a frying pan, add oil to it, and keep on a low flame.
  • Now add mustard seeds, hing (asafoetida), and Urad dal.
  • When done, add the chopped green chilies & curry leaves.

  • Now mix this garnishing with the Batter and give it a good mix.

  • Just before making Dosa, add the fruit salt and a tablespoon of water.

  • Now mix it lightly with the Batter and you will see that the Batter becomes very light and smooth.
  • The batter of SOFT BUN DOSA IS READY FOR USE.

  • Keep a deep frying pan to heat on a low flame. A deep frying pan is preferred to get the proper shape of BUN DOSA.
  • When the pan gets heated, smear some oil on the bottom and sides.

  • Now pour a big ladle full of batter into the pan.

  • Cover the pan for 1 minute and let the dosa cook.

  • Now carefully flip the Dosa.

  • Put a few drops of oil on the sides of Dosa.
  • After a minute, this side also gets roasted.
  • Remove on a serving plate, with chutney.

A VERY SOFT, FLUFFY, TASTY BUN DOSA IS READY TO SERVE. 
(You can pile up these dosas one on another to keep it soft and can carry these for your lunch box.)

This chutney is made out of a vegetable called –RIDGE GOURD.
Making chutney with the peelings of Ridge gourd is a very old and common practice.
But today I am showing you another way: I will be using the whole Ridge gourd to make this chutney.
INGREDIENTS FOR RIDGE GOURD CHUTNEY

  1. Ridge gourd- 1 medium (chopped)
  2. Fresh coconut-3-4 tablespoon
  3. Fried grams-2 tablespoons
  4. Green chilies-2-3 numbers
  5. Fresh coriander leaves-a handful
  6. Curry leaves-5-6 in numbers.
  7. Ginger-1 inch piece
  8. Tamarind-1/2 lime size (soaked in water)
  9. Salt- 1/2 teaspoon or more (acc to taste)
FOR GARNISHING:
  1. Oil- 1 tablespoon
  2. Urad dal-1 teaspoon
  3. Mustard seeds-3/4 teaspoon
  4. Asafoetida- 1 pinch
  5. Cury leaves-8-10 numbers.
PREPARATION NEEDED FOR CHUTNEY
  • Select a tender and fresh Ridge gourd.
  • Wash and cut in the following way.
  • (Taste it, before using, because sometimes it is bitter. Do not use if so.)

  • After cutting the RIDGE GOURD, wash and grate Ginger and fresh Coconut.
  • Now in a skillet take 1 teaspoon of oil and add all the chutney ingredients, i,e. chopped Ridge gourd, Green chilies, fried grams.grated Coconut. tamarind, grated ginger, Fresh coriander, and Curry leaves.

  • Grind the chutney in a grinding jar.

  • Add little water and Salt. while grinding.

 RIDGE GOURD CHUTNEY IS READY 
  • Before serving it needs garnishing.
INGREDIENTS TO GARNISH CHUTNEY
  1. Oil- 1 tablespoon
  2. Mustard seeds-3/4 teaspoon
  3. Urad dal-1 teaspoon
  4. Hing- 1 pinch
  5. Curry leaves- few
method:
  • Heat a tadka pan and add oil to it.
  • When oil gets heated, add mustard seeds, and after it splutters add Urad dal.
  • When dal is brown, put off the flame and add curry leaves and hing.

  • Put this Garnishing on the Chutney and cover to retain its aroma.

NOW CHUTNEY IS FULLY READY TO SERVE WITH THE FLUFFY AND SOFT BUN DOSA
