Hello friends, how about carrot halwa?
winter is still going on and so you get good-quality carrots. Especially in North India, we get very nice red-colored sweet carrots. Nowadays we get it in southern India also.
You know carrot also called Gajar, is a very common vegetable which can be taken in raw form, as well as in cooked form. It gives an attractive color as well as taste to your dish. You can use it along with other green vegetables.
Carrots normally come in two colors, RED AND ORANGE.
Both of them are used to make the sweet HALWA.
LET US KNOW ABOUT THE HERO -CARROT OR GAJAR.
CARROTS:
  1.  They contain 10%of Carbs-Starch, Fiber, and Simple Sugars.
  2.  They are low in fat and proteins.
  3.  They are rich in vitamins A, and K1. B6 and potassium. (good for vision, bone health & Blood Coagulation.
  4. Carrots reduce the risk of Cancer and lower Blood Cholesterol. help in Weight loss (low-calorie food).
  5. Carrots in their raw form have a low Glycemic index which increases when boiled or cooked.
MILK:
  1. Milk is considered a complete food as it contains almost all the essential nutrients needed for the human body.
  2. It has proteins, fat, calcium, phosphorous, magnesium, Potassium, Vitamin D, A, B1, B12, and sugars.
These are the two main ingredients along with sugar, ghee, and dry fruits are used which further increase the taste and nutritive value, and richness of the recipe.

Let us see the number of ingredients to be used in this CARROT HALWA.

  1. Carrots-400 grams
  2. Milk-1/2 liter
  3. Sugar-100 grams
  4. Ghee- 4-5 tablespoons
  5. Almonds-12-15 in numbers
  6. Cashews-12-15 in numbers
  7. Melon seeds-1 tablespoon
  8. Cardamom-6-8 in numbers

PREPARATIONS TO BE DONE for carrot halwa

  • Normally, Carrots have to be grated, which is a long process.
  • In this recipe, I will be showing you a new, easy, and quick method.
  • Select the good quality of Carrots wash, peel, and cut into small slices.

  • Cut Almonds and Cashews into small pieces.
  • Keep melon seeds and Raisins (dry grapes) ready.
  • No need to boil milk, we can use it as it is.
  • Remove the skin from cardamoms and powder 1/2 of them with little sugar to fine powder.

METHOD OF MAKING CARROT HALWA

  • Take a small pressure pan or cooker, add 2 tablespoons of ghee, and heat.

  •  when hot add the cut carrot pieces and saute for 1 minute.

  • Now close the lid and let it cook for 1 whistle time. Put off the flame.
  • Take a heavy bottom pan, heat it on a low flame, and add 2 tablespoons of ghee to it.
  • Now add the cooked Carrots to it and saute, crushing with the help of a potato masher.

  • Saute and mash alternately.
  • If very small pieces are left, they will get crushed while cooking the Halwa.

  • Now add the milk(1/2 liter) and let it boil on a low flame.

  • Stir in small intervals so that nothing settles in the bottom and gets burnt.

  • After about 8-10 mts, you will see that the HALWA starts thickening.
  • Now is the time to add sugar.

  • Again stir the HALWA, because it loosens, due to moisture released after adding SUGAR.
  • Now keep on moving the HALWA until  Ghee starts leaving the sides of the pan.

  • Now take a small fry pan. Heat on low flame.
  • Add 1 -2 tablespoons of Ghee to that.

  • Add chopped Almonds, Cashews, and melon seeds.
  • Fry till they get crunchy and change color.

  • Put off the flame and then add the Raisins to it.

NOW MIX THIS WITH HALWA.
