YES, USALI- HORSE GRAM MASALA IS A SPECIAL DISH MADE IN SOUTH INDIA.
This dish is made from sprouted horse gram. Though it is a little longer procedure and has to be planned.
It is a very nutritious dish. It is called horse gram because it gives strength similar to a Horse. (HORSE POWER ).
In this dish, we have to sprout the horse gram. we have to wash and soak the grams overnight and the next day we see it double in volume. Whenever we do the sprouting procedure, the gram increases its nutritive value also, especially B- complex vitamins.
For making the horse gram masala OR USALI, the sprouted grams are then pressure cooked and then garnished with green chilies, curry leaves, onions, coconut, lime juice, salt, etc
Let us see how to SPROUT THE HORSE GRAM FOR USALI
- Firstly clean the horse gram and wash 2-3 times and soak it overnight in plenty of water. (4 inches above the grams) It doubles in volume the next day.
- Now strain and remove the extra water through a strainer.
- keep it covered in a warm place.
- It starts sprouting after 5-6 hours.
- Cook it in the cooker adding 1 spoon of salt and 1 glass of water.(give 4-5 whistles).
- After the cooker is cool, take out the gram and strain it in a strainer to remove the excess water.
- Now Horse Gram is ready to use
INGREDIENTS FOR HORSE GRAM MASALA USALI
- Sprouted horse gram-2 cups(1 cup gram to be soaked to get 2 cups sprouted grams)
- Onion-1 big finely cut
- Fresh coconut-3-4 tablespoon
- Green chilies -4-5 finely chopped
- Coriander leaves- handful finely cut
- Ginger-1 inch piece(grated)
- Curry leaves-8-10
- Lime juice-1 medium-sized lime squeezed
- Turmeric-3/4 teaspoon
- Table salt-1 teaspoon
- Mustered seeds-1 teaspoon
- Oil-1.5 tablespoon
METHOD
- Keep a frying pan on the flame, and heat.
- Add oil to it. When hot, when hot put mustard seeds. Let it crackle.
- Now add things,, like green chilies(cut), cut curry leaves, ginger (grated), turmeric powder, and onion pieces.
- Saute till the raw smell of onion goes and it is transparent.
- Now add sprouted horse gram. (boiled).
- Saute it for 3-4 mts.
- Add grated fresh coconut, lime juice, and coriander leaves.
- Add a little salt if needed. SERVE HOT
NOTE; STRAINED WATER HAS MANY NUTRIENTS, DO NOT THROW.
