HELLO FRIENDS, TODAY I AM GOING TO SHOW YOU THE RECIPE FOR THE FESTIVAL  MAKAR-SHANKRANTHI.

THIS IS A VERY YUMMY SESAME ROLL MADE OUT OF HOMEMADE KHOYA OR MAWA.
For this festival, basically, sesame (till) and jaggery are used in many ways to make dishes.
In some states people make jaggery till laddu, some make chikki and in the south, we make a mixture of Roasted Till, Roasted Ground nuts, Dry coconut, Fried grams, and jaggery pieces and distribute it among relatives and friends.
In Northern INDIA, people make GAJAK and REVADI. They also make Till rolls, using khoya and Jaggery or Sugar.
  1. JAGGERY: This is good for people suffering from constipation.
  2. It acts as a detox agent as it cleanses the liver.
  3. It is loaded with antioxidants and minerals like zinc and selenium which prevents free radicals responsible for early aging.
  4. Potassium present in this helps in reducing water retention thus helping in weight loss.
  5. Potassium and sodium present in jaggery helps in maintaining acid levels and in turn, maintain normal blood pressure.
  6. It prevents menstrual pain and also prevents Anemia.
  7. It purifies blood, boosts immunity, and cures urinary tract problems.
  • SESAME SEEDS: The seeds and their oil is good for the glow of skin and hair.
  • Calcium and zink present in it, are good for strength and bone structure.
  • It is low in carbs, high in protein, and has healthy fats so is good for maintaining and regulating sugar levels.
  • It has omega-3 Fats, Fibre, Iron, Calcium, Magnesium, and phosphorous which boosts energy levels.
  • It has copper suitable for people with Rheumatoid Arthritis.
  • It has Magnesium which is ideal for respiratory problems.
  • It has Iron, Copper, Zinc, and vitamin B6, which help in creating Thyroid hormones.
  • It has anti-inflammatory properties and Anti-oxidants.
  • It improves mental health and also improves digestion
KHOYA OR MAWA;  As it is a dairy product, it is a good source of vitamin D and calcium, and vitamin K, which is a must for Bone health, Immune system, Skin, and Heart health.
I am going to show you this time, how to make khoya at home. It is very easy to make but time-consuming.
we can make khoya with milk. or milk powder. Again MILK is available in every home, so I thought it will be better to make khoya at home and use fresh khoya for the Sesame Roll.
Let us first make khoya:

METHOD OF MAKING KHOYA FOR SESAME ROLL.

For making 100 grams of khoya we need 1/2 liter of full cream milk.
  • Take a thick bottom pan.
  • Put 3-4 teaspoons of plain water in it and heat on a low flame.

  • Now add 1/2 liter of full cream milk to it.
  • You can keep a medium flame till it starts boiling.

  • Now reduce the flame and start stirring with a spatula.

  • STIRRING SHOULD BE CONTINUOUS.OTHERWISE, MILK WILL STICK TO THE BOTTOM AND BURN.
  • After stirring for about 30 mts, you will see that the milk thickens and turns into a soft dough.

  • Now Khoya is ready, transfer to another bowl.

INGREDIENTS FOR  MAKING SESAME ROLL:

  1. Khoya- 100 grams
  2. Sesame Seeds-125 grams (100 normal white till, 25-nylon till)
  3. Jaggery-125 grams
  4. Dry nuts-almond, cashew, and pistachio (thinly sliced)-2 tablespoon
  5. Ghee -1 tablespoon

PREPARATIONS TO BE DONE:
  • Dry roast the dry nuts, namely: Almonds, Cashews, and Pistachio.

  • Cool and slice as thin as possible.
  • Dry roast sesame seeds in a thick bottom pan at low flame, moving it continuously, till it swells and starts splashing.(DO NOT OVER ROAST OR ELSE IT WILL BECOME BITTER)

  • Cool it completely before grinding, otherwise, it will leave its oil and will not be in powder consistency. LET THE POWDER BE COARSE, NOT FINE.
  • Cut jaggery into small pieces.

                                                         METHOD OF COOKING FOR SESAME ROLL
  • Take a thick bottom pan.
  • put Khoya in it and start stirring it continuously, till Khoya becomes soft and semi-liquid.

  • Now put jaggery pieces and stir again.
  • Go on stirring till the jaggery melts completely.

  • Put off the flame and now put the sesame powder and combine all to make a soft dough.

  • As it cools it starts tightening.

  • Now put a tablespoon of roasted sesame seeds
  • Give it a good mix..

 ROLL MAKING METHOD
  • Spread parchment paper or Aluminium foil.
  • Smear ghee on it with the help of the brush.

  • Evenly spread some sesame seeds on it.

  • Now spread the dough mix on it,
  • Spread it evenly by using a rolling pin.

  • Now is the time to evenly sprinkle the cut and sliced dry nuts.
  • Again roll it once more with a rolling pin,

  • Now slowly roll it tightly with the help of Aluminium Foil.

  • Cut it in half if the roll is too big (long).

NOW KEEP IT IN THE REFRIGERATOR FOR ABOUT 1 HOUR.
SESAME ROLL IS NOW READY TO BE CUT INTO DISKS.
