Friends, today we will be making one more type of pickle, TRADITIONAL AMLA PICKLE.
But as it is seasonal, we have to make it whenever it is available and enjoy eating the whole season.

Let us see how to make Amla pickle.
AMLA IS USED IN 4 WAYS FOR MAKING PICKLES!
1) In this method, AMLA is washed, pat dried, and steamed, to make it a little soft, the seeds are removed and then the spices and oil are added. (North Indian style)
2) In this method you have to cut the AMLA PIECES and mix turmeric and salt, allow them to rest, and then add spices and keep the pickle in sun.
3) In this method, first a sour medium is made, such as Raw tamarind juice or even lime juice. Spices are mixed in it and the whole or little beaten Amlas are dropped in it. The salt, chili, and lime juice react with Amla and soften it to make a juicy pickle. (South Indian style)
4) In this method we wash, dry, and cut them into pieces and mix the spices along with lukewarm oil.
All the methods are equally tasty, healthy, and delicious. But if you want to store them for a longer time, I feel we should go for the third method.
HOW TO MAKE TRADITIONAL AMLA PICKLE?

- Select a good variety of AMLA, and wash and dry them thoroughly.
- Wash, dry, and cut AMLA INTO PIECES as shown below and remove seeds.
- cut all of them as shown above.
INGREDIENTS TO MAKE MASALA FOR HEALTHY AMLA PICKLE
- Fresh Amla-500 grams (cut in pieces)
- Gingelly or til oil-1 cup or as needed. (can use any oil)
- Yellow mustard powder-2 tablespoons
- Fennel seeds-2 tablespoons
- Fenugreek seeds-1 teaspoon
- Black seeds or Kalounji or onion seeds-1 tablespoon
- Kashmiri Red chilly powder-1 -2 tablespoons
- Salt-2 tablespoon
- Turmeric powder-1 teaspoon
- Asafoetida (hing)-1 teaspoon
METHOD OF MAKING TRADITIONAL AMLA PICKLE
- Heat about 1/2 cup of oil in a pan and let it cool. (lukewarm)
- Now put Fenugreek seeds, Fennel seeds, and Yellow mustard powder.
- Mix nicely
- Also add Salt, Red chilly powder, Black seeds, and Turmeric Combine them together.
- At last, add Hing too.
- Now is the time to add cut pieces of Amla.
- Now see, it has got a very appealing color.
- At this stage check for Salt and chilly and adjust.
- But now we have to put it in a bowl and cover it and keep it for 2 days.
- Now heat the rest of (1/2 cup) Oil nicely, let it cool completely, and then add to the pickle and mix.
- Transfer to an airtight sterilized glass jar to store for a longer time.
NOTE;- Never use moist or wet spoons to serve pickles.
Wooden spoons are best.
Never expose the pickle to air, light, or moisture directly.
