QUICK TOMATO CURRY
Hello friends, today’s recipe is TOMATO CURRY, which can be made very easily and quickly with a few ingredients from your kitchen. This dish is not complete by itself but can be used as a spicy, sweet, and sour side dish with lunch, dinner, or even breakfast with rice, roti, or bread.

Tomato curry is a very yummy dish. It can be served with most main dishes to add a zing, like pickles.
Many times, we are unable to make a proper dal or curry with chapati or rice due to a shortage of time or ingredients, and it is a boon if we are able to make a spicy (sweet and sour) curry using ripe tomatoes in a short span of time.
TOMATO CURRY is a dish made out of ripe tomatoes, onions, a few fresh herbs, and a few dry spices. Let us have a look at the ingredients needed for making tomato curry.
INGREDIENTS NEEDED FOR MAKING TOMATO CURRY:-
- Tomato-4-5 in numbers (fully ripe and sour variety)
- 1 Onion, 1 big finely chopped
- Green chili -1 finely chopped
- Curry leaves -1 spring, cut finely
- Coriander leaves- 1 tablespoon chopped
- Oil-1 tablespoon full
- Water-1 small glassfull
- Red chilli powder- 1 teaspoon
- Table salt- 1 small teaspoon
- Turmeric -1/2 teaspoon
- Roasted jeera powder – 1 small tea spoon
- Roasted methi powder-1/2 teaspoon
- Mustard seeds-1/2 teaspoon
- Cumin seeds-1/2 teaspoon
- Asafoetida- 1 pinch
- Jaggery-1 tablespoon
- Tamarind paste teaspoon.


METHOD OF COOKING TOMATO CURRY:-
- Cut the tomato into small pieces.
- Cut the onion, green chilies, coriander leaves, and Curry leaves. Keep all other dry spices ready.
- Take oil in a pan and heat on low flame.

- Add mustard,hing, and cumin seeds, and let them splutter.

- Now is the time to add green chilies and curry leaves.

- When done, add cut onions and saute till it becomes translucent.


- Now is the time to add all the dry spices and mix.

- Add a glass of water so that the dry spices don’t burn.

- As soon as the water starts boiling, add the cut tomatoes.

- Mix well and keep it covered till the tomatoes become soft.
- Now is the time to add 2 more ingredients: tamarind paste and jaggery.

- Simmer for 30 seconds and put off the flame.


- LASTLY, GARNISH WITH FRESH CORIANDER LEAVES AND SERVE HOT.
