veg sandwich with mayonnaise
Hello, I am here with you to show you one more type of veg sandwich.

Friends, in my previous post, I showed you how to make a potato sandwich, which is sometimes restricted for a few people for health reasons.
So I thought of trying something much healthier, a sandwich that is universally appealing.
Here I will be using a homemade, healthy, veg mayonnaise as a spread, on bread slices, a few raw vegetables, and a few healthy herbs for stuffing.
Making a veg sandwich consists of 3 steps.
- Making of mayonnaise.
- making of stuff
- Roasting or grilling the sandwich.
Today, I will be showing you a very easy method of making mayonnaise.
NOTE- Here I am not using oil or egg to make mayonnaise
INGREDIENTS FOR MAKING MAYONNAISE FOR A VEG SANDWICH:-

- Cashews-25-30 in numbers.
- Milk 50-60 ml at room temperature.
- Water 1 glass to boil the cashews.
- lime-1/2
- Garlic-1-2 cloves
- Salt-1/2 teaspoon
- White or Black pepper powder-1/2 teaspoon
- Fresh coriander leaves-1/2 fist.
- Mint-a few leaves

METHOD OF MAKING MAYONNAISE:-
- Take a glass of water and boil it in a pan.
- When water boils, add the cashews and boil for about 4-5 minutes, or till the cashews get softened.

- Now, cool and remove the water.
- Put the boiled and cooled Cashews into a multimix jar, along with the rest of the ingredients.

- Do not add mint and coriander leaves at first.
- THIS IS A CREAMY OFF-WHITE MAYONNAISE.

- If you add any mint or fresh coriander leaves, it becomes green-colored and flavored Mayonnaise. It is now ready to use.

- Note:- Do not add any water, let it have a semi-flowing consistency. Store it in an air-tight container in the Refrigerator.
- This mayonnaise can be used as a spread, a dressing, and also as a dip.
MAKING THE STUFF FOR VEG SANDWICH:-
- Now chop the vegetables of your choice into small pieces.
- tomato-1-2 medium-sized.
- Cucumber-1/2 medium-sized grated.
- Onion-1 big, (finely chopped)
- Carrots-1 big grated
- Green capsicum-1/2 medium-sized chopped finely
- Green chilly-1-2 finely cut
- Black pepper powder-1/2 teaspoon
- Red chilly flakes-1/2 teaspoon.
- Salt to taste.
- Mayonnaise, you just made, 2 tablespoons.

Note-ADD ROASTED AND COARSELY GROUND PEANUTS, AND ROASTED GINGELLY SEEDS (TILL) FOR CRUNCH.
Mix all of them nicely.

GRILLING PROCESS OF THE VEG SANDWICH:-
- Here comes the main grilling part of the process.
- Take a grill pan, which is designed in such a way that it gives the sandwich a beautiful look with crispy lines. (The link is given below after the description)
- Heat it with a spoonful of oil, butter, or ghee. ( smear with a brush).

- Keep a slice of bread in the heated pan.(You can remove the edges of the bread if you want.)
- Spread some mayonnaise on it, and also the stuff of vegetables.

- Put one more slice of bread over it.
- Put some butter on it and press with a steel flat spatula to apply some pressure on it so that the slice comes into contact with the grill pan to the maximum.

- After a few seconds, flip it onto the other side.


NOTE: Grilling should be done on low to medium heat to get a fully crisp veg sandwich.
Now you can cut it into any shape and serve with your favourite chutney or sauce for Evening Tea.
