METHI KA MUTHIYA

Hai friends, Let me introduce you to MUTHIYA,

METHI -MUTHIYA

MUTHIYA is a steamed snack from the state of GUJRAT. It is a very healthy and tasty tea-time snack. The ingredients used in this dish are very simple and easily available. It has a spicy khatta meetha taste.

We need wheat flour, gram flour or Besan, Bajra flour (optional), fresh fenugreek leaves (methi), and a few herbs and spices

Muthiya is also made using a Bottle guard.

You already know that Methi leaves have a bundle of healthy nutrients. It has a high fiber content,so helps in weight loss, is also good for gut health, and manages Diabetes and cholesterol. It also has high calcium and so keeps your bones healthy.

Let us see the ingredients needed to make this healthy methi MUTHIYA.

INGREDIENTS FOR METHI MUTHIYA:-

  • Wheat flour-1 cup
  • Gram flour or Besan-1 tablespoon
  • Fenugreek or Methi leaves-1 cup(2 hand grip full)
  • Oil -3 tablespoon
  • Ajwain seeds (carom) -1 teaspoon.
  • White sesame (til)-2 tablespoon.
  • coriander powder-1 teaspoon
  • Garam masala-1 small teaspoon
  • Haldi-1/2 teaspoon
  • Sugar-1 teaspoon
  • Salt-1 teaspoon
  • Lime juice- 1/2
  • Mustard-1 small teaspoon.
  • Hing-1 peanut size
  • Green chilies-3 to 4
  • Curry leaves -few
  • Ginger-1 inch piece
  • Garlic-3-4 cloves
  • Water-2-3 tablespoons (for kneading the dough)

INSTRUCTIONS TO FOLLOW BEFORE KNEADING DOUGH FOR MUTHIYA:-

  • Wash and cut methi leaves roughly.
  • Make a paste of green chilly, garlic and ginger.
  • Measure wheat flour and besan and keep ready.
  • Squeez the lime juice and keep.
  • Keep oil, water, salt, Sugar, Sesame seeds, Ajwain, Haldi, Garam masala, and Coriander powder ready.
  • Keep Oil, Mustard seeds, Hing and curry leaves ready for tadaka or garnishing.
  • Lastly coriander leaves and fresh or dry coconut scrapings.

Method to knead dough:-

  • Take a mixing bowl.
  • Put chopped methi leaves, ginger,garlic, chilly paste, salt , sugar, limejuice, coriandrder powder, garam masala, haldi, Ajwainseeds, sesame seeds (1/2 the quantity), 1 tablespoon oil, and mix all.

  • It leaves little moisture because of the salt ans sugar in it.
  • Now add flours and mix.
  • Add enough water to make a tight dough.

  • Rest for 5 minutes.Smear some oil and keep.

PREPARATION OF MUTHIYA FROM THE DOUGH;-

  • Devide the dough into 3or 4 portions.
  • Make rolls of 1.5 inch diameter and 5-6 inch long like a log.

  • Keep the logs of dough in a steamer for about 15 mts.cool and then it is ready.

  • cut it like disks and keep ready.

GARNISHING METHOD:-

  • Take a FLAT PAN , put 2 tablespoons of oil and heat. now put mustard seeds and hing. when done add sesame seeds , curry leaves and then add cut disks of the STEAMED MUTHIYA DOUGH.

  • Keep the flame to low and mix the MUTHIYA and spread it all over the pan so that the pieces get crisp and coated with sesame seeds,oil and curry leaves.

  • At last put coriander leaves and coconut scrapings and serve.
METHI -MUTHIYA
  • This doesnt need and sauce, chutney or raita.
  • This can be taken as it is but hot with tea.
