Healthy Gurellu and its recipes, from North Karnataka, This is what I will be showing you in detail in this post.

What is Gurellu?

Gurellu is also called hucchellu or Uchellu. Both of these are Kannada terms. It is called NIGER SEEDS In English. In Hindi, it is called Ramtil.

Niger seed is an herb, that grows annually, for its edible seeds. It can be confused with sunflower seeds, but it is smaller, shiny, and dark grey in color. It is an oil seed and quite cheap in price.

you might have tasted it in North Karnataka Meals, with ragi or Jowar Roti.

Niger seeds are consumed, because of their wonderful medicinal and nutritional benefits. few of them are;-

  1. It has Omega-3 -3 and for vegetarians, it is a boon, as it boosts Immunity, heart health, and antioxidants
  2. It is rich in fiber so helps with digestive and gastrointestinal problems and helps in weight loss.
  3. It has magnesium and zinc which is a good solution for Thyroid, PCOD, Diabetes, and menopause.
  4. It has a good amount of potassium which reduces Blood Pressure and helps in good sleep.

Here I will be showing you about Healthy Gurellu and its recipes in our cooking to make Raita and chutneys. the Gurellu are roasted and ground with spices and need some binding with peanuts or puffed chana. It can be in the form of wet chutney or dry powder. both of them taste awesome due to the oil present in the seeds.

INGREDIENTS FOR HEALTHY GURELLU-CHUTNEY

  • 3 tablespoons of -Gurellu or niger seeds.
  • 2 tablespoons of roasted chana
  • 3-5 numbers of red chilies.
  • 1pod-ripe tamarind.
  • 4-5 cloves of garlic.
  • 1 spring of curry leaves.
  • A handful of fresh coriander leaves.
  • 3/4 teaspoon of -table salt.
  • 1 teaspoon of -Jaggery powder (optional).
  • 1/2 cup of water to grind.

Instructions for making a healthy Gurellu-chutney

  • Keep all the above ingredients ready for Gurellu chutney.
  • Take the Gurellu seeds, clean and keep them aside.

  • keep a thick bottom fry pan to heat and when hot reduce the flame and dry roast the Gurellu seeds till all the seeds splutter making sounds. Remove on a plate.

  • Now in the same hot pan, on low flame, roast Red chilies till crisp.

  • let it cool completely.
  • Now take a mixer grinder jar and add all the ingredients to it.

  • dry grind first, and then put sufficient water to make a fine paste.

A VERY HEALTHY, DELICIOUS, YUMMY SPICY, AND TASTY CHUTNEY IS READY TO RELISH WITH JOWAR OR RAGI ROTI.

INGREDIENTS FOR HEALTHY GURELLU-RAITA

  • 1/2 cup of Gurellu seeds
  • 2 tablespoons of coconut gratings.
  • 2 tablespoons of-groundnuts
  • 25-30 fresh mint leaves
  • A handful of fresh coriander leaves
  • 4-5 cloves of garlic
  • 2 pods of ripe tamarind.
  • 1 inch of ginger piece.
  • 5-6 numbers -Red chilies.
  • 1 teaspoon of jaggery powder.
  • 1 teaspoon of -Table salt.
  • 1 cup of -thick curd (for Raita)

Instructions for making a healthy Gurellu- RAITA:-

  • Keep all the above ingredients ready for Raita.
  • As already mentioned above, dry roast the Gurellu seeds on low flame in a frypan.

  • Now dry roast the groundnuts till it starts to smell.
  • Now in the same pan on low heat dry roast red chilies. you can roast them together.

  • let all of them cool completely.
  • Now put the rest of the ingredients along with the roasted ones in the grinding jar and grind to a little coarse powder.

Gurellu chutney powder can now be relished with hot Rice, Jowar, and ragi rotis in dry form.

To make Raita, just mix it with thick curd and serve.

  • Notes:-Do consume HEALTHY GURELLU in one or the other form to get their health benefits.
  • Always try to use fresh niger seeds, because it is an oil seed and so if it is old they may smell and taste bitter.
