MENTHYA HITTU spicy protein powder:- MENTHYA- means fenugreek seeds, and HITTU- means flour or powdered form
You might have heard about protein powder, taken with milk for a healthy body. But today I shall introduce you to a very tasty, healthy, and menthya hittu-spicy protein powder, consisting of 4 dals and fenugreek seeds with a few more spices.
Menthya hittu is like other spicy chutney powders but is used differently. It is made by using toor dal, chana dal, urad dal, and moong dal taken in equal quantities, dry roasted, and ground with few spices like fenugreek, cumin, Red chilies, and dry coriander seeds. Salt, turmeric, and Hing are also added.
As all types of lentils are used, it is very nutritious. especially for pregnant ladies, it’s a boon.
They can have this yummy powder with hot rice and ghee.
Let us see the ingredients which are necessary for this yummy menthya hittu.
Ingredients needed for MENTHYA HITTU:-

- 1/2 cup of- chana dal
- 1/2 cup of -urad dal
- 1/2 cup of- toor dal
- 1/2 cup of- moong dal
- 10 -12 numbers of-Dry red chilies
- 1 and 1/2 tablespoons of dry coriander seeds
- 1 teaspoon of cumin seeds
- 1 teaspoon of- fenugreek seeds
- 1 heaped teaspoon of -table salt
- 1 teaspoon of- turmeric powder
- 1 peanut size -asafoetida or Hing
- 1 teaspoon of -cooking oil (any)
For a yummy grandma’s-recipe- use this menthya hittu
- 2-3 tablespoons of – Menthya hittu.
- 1 small lime-sized ball of tamarind
- 1 tablespoon of-jaggery
- 1/2 teaspoon of table salt
- 1/2 teaspoon of-turmeric
- 1/2 teaspoon of -mustard seeds
- 1 small pinch of -Hing
- 1 teaspoon of cooking oil
- 2 green chilly sliced
- 1 spring of -curry leaves
- Few fresh coriander leaves
Instructions for making MENTHYA HITTU:-
- Measure the ingredients and keep them aside.
- Now keep a thick-bottomed fry pan on medium flame to heat.
- When the pan gets heated, reduce the heat further and add chana dal into the pan.
- Now with a wooden spatula start dry roasting the dal, till the color changes to golden brown and you start getting a nice aroma
- Remove on a plate, it takes 3-4 minutes.
- Now take urad dal and roast it in the same way.
- Next, add toor dal and roast till golden brown.
- Next comes the turn of moong dal. Roast in the same way.
- Now in the same pan and on the same heat roast coriander seeds, cumin seeds, and fenugreek seeds, till they get a little brown color and crispy.
(Never overroast the spices as it gets bitter if done).
- Remove the roasted spices to a plate.
- Add 1 teaspoon of oil to the pan. Now Add the red chilies, and roast till crisp and swollen. Next add Hing, turmeric, salt, and all the roasted dals and spices to the frying pan and combine them.
GRINDING OF THE MENTHYA HITTU:-
- Cool the ingredients completely and then put them in the mixer grinder.
- Now grind it to coarse powder at first, and mix once again.
- After mixing, put once more in a multi-mix and grind to a fine powder. you can sieve and get a uniform nice powder.
- Now put the powder on a big plate and cool, it before storing it in an air-tight container, preferably in a glass jar.

Making of grandmas-recipe with MENTHYA HITTU:-
- Keep the above ingredients ready.
- A very easy and fast way of making this dish is for you.
- Soak the tamarind and squeeze to remove the pulp.
- Soak the jaggery in 1/4 cup of water.
- Take the Menthya hittu in a bowl and add 1/4 cup of water to make a paste without the lumps.
- put all of these into a bowl and mix adding salt.

- For garnishing, take a Tadka pan.
- add oil to it and heat.
- Add mustard seeds and when the mustard seeds crackle, add hing.
- Now add the chopped green chilies and curry leaves. after a few seconds, put off the flame.
- Now put this garnishing on the dish you just made.
- Lastly, add freshly cut coriander leaves on top.
Relish the taste with HOT RICE, RAGI BALLS, ON HOT DOSA, OR IN CHURMURI.
notes:-
- The thickness of gravy you just made can be as thick or a little flowy as you need, depending upon the dish you eat with.
- you can relish the taste with HOT RAGI BALLS TOO.
Grind the powder as fine as possible.
