Today I will show you one more method of using leftover cooked rice to make Crispy Dosa.
friends, many a time especially during festivals or functions, we are unable to cook an accurate quantity of Plain-rice and so we often cook in more quantities. This becomes extra and leftover.
On the following day, you are tired, with low energy, and you are not in the mood to make breakfast. So at that time, you try to find out some way to make it easier and fast without compromising your palate.
There comes this recipe, which is easy, simple, and quick to make.
In this method we can prepare dosa instantly, meaning no headache of pre-soaking, fermenting, or pre-planning. within 30 mts you can make this crispy Dosa.
We are using leftover cooked rice for making instant crispy dosa. This instant Dosa is made by using semolina, curds, and leftover cooked rice which is readily available in homes. All the ingredients are ground to a fine batter and given 10 mts resting time. the batter is now ready to make Dosa. Dosas are made in a normal way.

- 1 cup of semolina-can use thick or fine variety.
- 1/2 cup curds
- 1 cup of cooked rice
- 1 cup of Water
- 1 teaspoon of salt
- 1/4 teaspoon of baking soda
- oil, ghee, or butter to roast Dosa.
PREPARATION OF THE BATTER FOR INSTANT CRISPY DOSA

- Firstly grind the semolina or sooji finely in the mixer grinder.
- Put it in a bowl. Also grind the cooked rice, in the same way, adding enough water, and put it into the same bowl.
- combine well.
- keep covered for about 10 minutes.

- Now the batter is ready for adding salt and baking soda. also, add some water over soda and salt and mix it light-handedly.


- NOTE:-This step must be just before you start making Dosa.
MAKING OF INSTANT CRISPY DOSA USING LEFTOVER COOKED RICE:-
- Heat a Dosa Tawa on medium flame.
smear oil, and wipe it with a kitchen tissue. (keep the flame low, if you want a crispy Dosa.)
Now sprinkle some water and then pour 1 ladleful of batter and spread it with the help of a ladle.

- Sprinkle a little oil on top of DOSA.
You will see after a few seconds Dosa starts getting a beautiful golden color which is seen through the tiny holes on the sides of the dosa.

- Dosa is ready.
- Leave Dosa for a few more seconds, and you can remove it now.
no need to flip and cook on another side. - serve hot with red tomato-onion chutney.

- NOTES:-If the Tawa is too hot, sprinkle some water to cool the Tawa, or else the batter will stick to the Tawa as soon as you put it on it, and you will not be able to spread the batter as you wish.
- Always have patience while roasting dosa, as it needs low flame and time to get crisp.
- After you prepare the batter, do not rest it for more than 10 mts, or else the dosa will become softer and not crispy.
