Dear friends,
First of all, accept my greetings for “MAHA SHIVRATRI”.
On this auspicious day, we all make (south Indians), a special laddu, named THAMBITTU. OR KALLUNDE.
The first one is a softer variety of laddu, and the second one is hard laddu.
The specialty of this laddu is that NO OIL OR GHEE IS USED for making this.
YET, BOTH OF THEM ARE YUMMY IN TASTE.
The difference is due to the ingredients used, and the methods used in making them.
Mainly two methods are there.
- Using Rice+ moong dal.
- Using Rice +fried grams, and
- Using only fried grams as the main ingredient.
The other ingredients used are the same for all, namely:-Peanuts or groundnuts, Sesame seeds, Poppy seeds, Cardamoms, dry coconut, jaggery, etc.
Today I will be showing you the very easy, soft, delicious, healthy, and very quick method of making a very special laddu- THAMBITTU.of Karnataka.
Let us have a look at the Ingredients needed for making this THAMBITTU.
INGREDIENTS FOR THAMBITTU.

- Fried grams-1 +1/4 cup
- Jaggery-1 cup
- Water-1/2 cup
- Groundnuts -3/4 cup
- White sesame seeds-4 tablespoon
- Coconut cut into pieces-3/4 cup
- Cardamoms-2-3 numbers.
PREPARATIONS NEEDED
- Take a frying pan and heat it.
- Add the ground nuts and roast on a low flame, till it starts smelling and leaving its skin, and changing color.
- Remove to a plate and let it cool.
- In the hot kadhai, on low flame, dry roast, the sesame seeds, till it puffs and starts changing color.
- when it turns golden brown, remove on a plate.
- Switch off the flame, and to that hot frying pan add Poppy seeds and roast.
Do not over-roast, as it turns bitter.
- Now in a mixer grinder, Put fried grams and cardamom seeds, and powder it finely.
- Keep it in a mixing bowl.
- Remove the skin of the peanuts and break them into two parts.
- You can crush the nuts giving pulse movement in your mixer for a few seconds.
- Add to fried gram mixture.
- You can either grate or cut the dry coconut or can do both.
- Add roasted sesame seeds, poppy seeds, and coconut to the fried gram mix in the mixing bowl.
- Combine all of them nicely, and keep it ready.
Making syrup for THAMBITTU.
- Making jaggery syrup is very easy.
- Take a saucepan.
- Add 1 cup of powdered Jaggery and 1/2 a cup of water. heat on a low flame.
- Let the jaggery melt and the syrup boil.
AFTER THE JAGGERY SYRUP STARTS BOILING COOK FOR 2 MORE MTS.
- No need to test the syrup for strands, as the syrup can be used in this stage.
- If you use syrup at this stage, you can make a soft laddu, If the syrup thickens, you get a harder laddu,
- So remove the syrup pan and start adding a little at a time (straining it).
- Start making laddus.
Note: Make 9 to 10 medium-sized laddus for this quantity of ingredients used.
A VERY YUMMY, HEALTHY, DELICIOUS, AND TASTY THAMBITTU IS READY TO BE OFFERED TO LORD SHIVA AND RELISH AS PRASADAM.
