Let us first see the ingredients needed for making crushed PEANUT CHIKKI
- Firstly, we have to dry roast the peanuts in a pan.
- So, keep a thick-bottomed pan on a low flame and dry roast the peanuts.
- You will see that the peanuts start to split and make sounds.
- Continue till you get a nice aroma and slight color change.
- Now remove it on a turkey towel and let it cool a bit.
- Now slightly roll it with a rolling pin.
- This process helps in the removal of skin and also crushes the peanuts in half,
- Put it on a plate and blow away the skin.
- Now, this peanut is ready to use.
- Also dry roast the sesame seeds, on a low flame till it puffs, and starts a nice aroma.
- Crush both in a mixer by giving a pulse movement, so that we get a coarse powder of it.
- Take a big plate, turn it upside down, smear ghee on it, and keep it ready.
METHOD OF MAKING YUMMY CRUNCHY CRUSHED PEANUT CHIKKI
- You see the sugar starts melting.
- Sugar syrup also changes its color.
- When sugar completely dissolves, add 1 teaspoon of ghee.
- Add the crushed peanuts to it. and quickly combine them together.
- Now put this mix on the greased plate.
- spread it evenly with the help of a spatula or roll it out evenly with a rolling pin. (greased)
- Mark it in a square or rectangle shape, when the chikki is still a little hot.
- Cool it completely and then you can easily break the pieces and enjoy.
PEANUT CHIKKI (USING ROASTED 1/2 OR SPLIT PEANUTS
- Peanuts or groundnuts-1 cup
- Jaggery (crushed into pieces)-2 cup
- ghee-1 tablespoon
METHOD OF ROASTING PEANUTS FOR PEANUT CHIKKI
- Take a frying pan and heat it on low flame.
- Add the peanuts and dry roast.
- You can see and hear its cracking sound.
- Roast for a little more time and the nice aroma can be felt.
- Now remove it and put it on a towel.
- Let it cool a little and then cover the nuts and using a roller pin, roll them very lightly.
- As the nuts are crispy, the skin gets separated very easily.
- Now in a thick bottom pan, take a teaspoon of ghee and heat on a low flame.
- Add a measured quantity of jaggery and let it dissolve. Do not add any water.
- Grease the backside of a plate and keep it ready.
- cook the syrup till it gets foamy consistency
- To test the correct stage of syrup, drop a few drops of syrup in a bowl of water.
- If the drop when stretched stretches, it means the consistency of the syrup is still not done.
- cook for a few more seconds and again check in the same way.
- It should be brittle and break with sound.
- Put off the flame.
- Now the syrup is ready. so you can add the Roasted peanuts (1/2 split) into it and combine them quickly.
- Spread on a pre-greased plate evenly, can use a rolling pin. (greased).
- Mark it into square pieces, when still warm, otherwise, it will be difficult to get a good shape.
