HELLO FRIENDS, how about ” CRUSHED PEANUT CHIKKI
SANKRANTI FESTIVAL is nearby and in most the INDIAN STATES, this festival is celebrated.
This is the winter season and people eat such food which has oil in it, and among them are SESAME or TILL SEEDS, and GROUND NUTS.
Therefore these are combined in different methods and are distributed to people during the FESTIVAL.
In Maharashtra, people make GROUNDNUT OR PEANUT CHIKKI AND LADDU.
LONAVALA Chikki is very famous.
Today we will be knowing about the method of making CRUSHED PEANUT OR GROUNDNUT chikki.
PEANUT CHIKKI
Chikki basically is a SWEET BURFI, made out of Groundnut, using either SUGAR OR JAGGERY.
Both look the same but are different in taste.
We can use the Groundnuts in halves, or in a crushed form. You will see both types in this post.
Preparation time is very less and you can make it in a very short time.

Let us first see the ingredients needed for making crushed PEANUT CHIKKI

INGREDIENTS:
  1. Groundnuts or Peanuts-2 cups
  2. Sugar-1 cup
  3. Sesame seeds-1/4 cup
  4. Ghee -1 tablespoon

preparations needed:(removal of the skin and making half pieces)
  • Firstly, we have to dry roast the peanuts in a pan.
  • So, keep a thick-bottomed pan on a low flame and dry roast the peanuts.

  • You will see that the peanuts start to split and make sounds.
  • Continue till you get a nice aroma and slight color change.

  • Now remove it on a turkey towel and let it cool a bit.

  • Now slightly roll it with a rolling pin.

  • This process helps in the removal of skin and also crushes the peanuts in half,

  • Put it on a plate and blow away the skin.
  • Now, this peanut is ready to use.
  • Also dry roast the sesame seeds, on a low flame till it puffs, and starts a nice aroma.

  • Crush both in a mixer by giving a pulse movement, so that we get a coarse powder of it.

  •  Take a big plate, turn it upside down, smear ghee on it, and keep it ready.

METHOD OF MAKING YUMMY CRUNCHY CRUSHED PEANUT CHIKKI

Take a thick-bottomed pan and put it on a low flame to heat.
Add Sugar to it, and stir it continuously.
Do not add any water.

  • You see the sugar starts melting.
  • Sugar syrup also changes its color.
  • When sugar completely dissolves, add 1 teaspoon of ghee.

  • Add the crushed peanuts to it. and quickly combine them together.

  • Now put this mix on the greased plate.
  • spread it evenly with the help of a spatula or roll it out evenly with a rolling pin. (greased)

  • Mark it in a square or rectangle shape, when the chikki is still a little hot.

  • Cool it completely and then you can easily break the pieces and enjoy.
FOR DECORATION YOU CAN ROLL THE PIECES IN DESICCATED COCONUT.
A VERY HEALTHY, CRUNCHY, YUMMY CRUSHED PEANUT CHIKKI IS READY TO EAT.

PEANUT CHIKKI (USING ROASTED 1/2 OR SPLIT PEANUTS

The method of roasting and removing the skin is the same as previously shown.
But in this recipe, the peanuts are not crushed.
INGREDIENTS :
  1. Peanuts or groundnuts-1 cup
  2. Jaggery (crushed into pieces)-2 cup
  3. ghee-1 tablespoon

METHOD OF ROASTING PEANUTS FOR PEANUT CHIKKI

  • Take a frying pan and heat it on low flame.
  • Add the peanuts and dry roast.

  • You can see and hear its cracking sound.
  • Roast for a little more time and the nice aroma can be felt.

  • Now remove it and put it on a towel.

  • Let it cool a little and then cover the nuts and using a roller pin, roll them very lightly.

  • As the nuts are crispy, the skin gets separated very easily.

  • Now in a thick bottom pan, take a teaspoon of ghee and heat on a low flame.

  • Add a measured quantity of jaggery and let it dissolve. Do not add any water.

  • Grease the backside of a plate and keep it ready.

  • cook the syrup till it gets foamy consistency

  • To test the correct stage of syrup, drop a few drops of syrup in a bowl of water.
  • If the drop when stretched stretches, it means the consistency of the syrup is still not done.

  • cook for a few more seconds and again check in the same way.
  • It should be brittle and break with sound.
  • Put off the flame.
  • Now the syrup is ready. so you can add the Roasted peanuts (1/2 split) into it and combine them quickly.

  • Spread on a pre-greased plate evenly, can use a rolling pin. (greased).

  • Mark it into square pieces, when still warm, otherwise, it will be difficult to get a good shape.

NOTE: IN the SOUTHERN PARTS OF INDIA, the method is different, especially in KARNATAKA.
We make a mix of roasted Groundnuts, Dry coconut, Jaggery pieces, fried grams, and roasted sesame seeds.
(Coconut and jaggery have to be cut into small cubes for mixing).
