Along with the rasam, sprouted horse gram usali or palya is made. (like a combo)
In my previous post, I showed you the method of making sprouted horse gram sambar, or rasam.
After, boiling or pressure cooking the sprouted horse gram, we have to remove its water completely.
In this post, I shall show you the further use of the boiled sprouted horse gram, to make a very tasty and healthy usali or palya.
Now we have to make usali, or palya (in Kannada), a kind of sabzi to be consumed with the rasam.

To make this dish we need the following ingredients.
INGREDIENTS FOR HORSE GRAM USALI
- Cooked sprouted horse gram- 1 big bowl full
- Onions-2-3 medium size (finely cut)
- Freshly grated coconut-1/2 cup
- Green chilies-5-6 (finely cut)
- Curry leaves-few (finely cut)
- Ginger-1 inch piece (grated)
- Fresh coriander leaves handful (roughly chopped
- Fresh lime-1/2 (deseeded)
- Salt-1 level teaspoon or as needed
For garnishing-
- Oil or ghee-1 tablespoon
- Chana dal-1 teaspoon
- Urad dal-1 teaspoon
- Asafoetida-1 small peanut-sized
- Mustard seeds-3/4 teaspoon
- Turmeric-3/4 teaspoon
PREPARATIONS TO BE DONE BEFORE STARTING THE DISH-HORSE GRAM USALI
- Before making this dish, keep the boiled and strained sprouted horse gram ready.
- Peel and cut the onions into small pieces.
- Grate the fresh coconut and keep it aside.
- Keep finely chopped Green chilies, Curry leaves, and fresh coriander leaves ready.
- Grate the Ginger piece, after washing it nicely.
- keep all the garnishing ingredients easily reachable.
METHOD OF MAKING HORSE GRAM USALI
- Keep a thick-bottomed frying pan to heat on a low flame.
- Add 1 tablespoon to it.
- When oil gets heated add mustard seeds, and allow them to crackle.
- Now add Chana dal and Urad dal to the oil and saute till the dals get a good golden color.
- When done, add the chopped green chilies, curry leaves, and Grated ginger.
- Saute, till nicely fried.
- Now is the time to add chopped Onions to the pan.
- Add turmeric powder also, and combine all. cook for 1 minute.
- Add the Sprouted and boiled horse gram to this and mix well.
- Add salt and mix well.
- Cover and keep for 2 mts, so that the gram absorbs salt and other flavors.
- As it is pre-cooked, it won’t take much time.
- Now add Grated fresh coconut and Fresh coriander leaves.
- Put off the flame and add lime juice to it.
YOU CAN EAT IT FOR MORNING BREAKFAST, OR AT THE LUNCH OR IN THE EVENING OR DINNER. ANYTIME
