Friends, still it is the rainy season.
Every evening we feel like having some hot, crispy. and tangy Snacks.
But because of health reasons, we have to be choosy.
So friends, let us make a very easy, healthy, and delicious Evening tea time snack
Let us make  AMERICAN SWEET CORN CUTLETS. 
CORNS are mainly of 3 types.
  • BABY CORNS-Generally used for making soups, fritters, and also currys,
  • NORMAL OR LOCAL CORNS-Which is not sweet, is used in making, khiss, fritters, and roasted or boiled.
  • SWEET AMERICAN CORNS-used in Corn Chats, Pulao, Curry and for Cutlets, Kababs, and Tikki.
  • Today we will be using the last one, American sweet corn for our snack.
 AMERICAN SWEET CORNS:-health benefits
  1. Sweet corns are rich in B1, B5 Vitamin C, Manganese & Phosphorus.
  2. It is rich in Folate and Fiber for digestive health.
  3. It has Vitamin B12, Iron, and Folic Acid, which helps in combating Anemia.
  4. It controls cholesterol levels in the Blood.
  5. It contains Beta Carotene to produce Vitamin A, for Better Vision.
  6. It prevents hair loss.
  7. It removes Facial Acne scars because it has Vitamin E content.
  8. Sweet corn is a starchy grain, a storehouse of Energy.
  9. Vitamin B, present in corn regulates protein, lipid, and carbohydrate metabolism and releases Insulin.
  10. It has a Glycemic Index of 58, so is a superfood for those who are Diabetic
  11. It has omega-3 fatty acids, which remove harmful fatty acids, and reduces the risk of Heart attack
So, friends using corn for a snack is a very good choice.
SWEET CORN CUTLETS, also called patties or kababs are made in different shapes and sizes.
The basic ingredients in the cutlet are vegetables, Spices, Herbs, and binding agents.
Binding is done with Refined flour paste, Flattened rice (poha), or even boiled potatoes.
And for the crunch, you need semolina, thin noodles, or Bread crumbs.
Let us now see the Ingredients, we need to make  SWEET CORN CUTLETS.

INGREDIENTS TO MAKE SWEET CORN CUTLETS:-

  1. American sweet corn-1 big
  2. Onion-2 medium-sized
  3. Bread crumbs (fresh or dry)-1 cup 5-6 slices.
  4. Green chilies-3-4 (finely chopped)
  5. Lime-1 medium (juice)
  6. Fresh coriander leaves-2 tablespoons (finely cut)
  7. Ginger-1 teaspoon (grated)
  8. Oil-2-3 tablespoons(for garnishing and shallow frying)
  9. Cumin seeds-3/4 teaspoon
  10. Turmeric-1/2 teaspoon
  11. Asafoetida-1/4 teaspoon
  12. Garam masala-1 teaspoon
  13. Salt -1 level teaspoon
  14. Coriander powder-1 teaspoon
  15. Red chilly powder-1 teaspoon
  16. Amchur-1 teaspoon
PREPARATIONS NEEDED TO BE DONE FOR SWEET CORN CUTLETS
  • First of all select good American sweetcorn.

  • Cut open the corn by slitting the covering.
  • Remove the thin string-like thing on the corn.
  • Now remove the kernels from the cob. Keep aside.

  • Take Bread slices and powder them in the multi-mix to a powder.

  • Peel and cut the onions into small pieces.
  • Grate the Ginger piece.
  • Wash and chop the fresh coriander leaves.
  • Chop the green chilies.
  • Take out the juice of the lime.
  • Keep all the dry spices ready.

                                       METHOD OF MAKING SWEET CORN CUTLETS.

  • Take a frying pan, heat it on a low flame, and add oil to it.

  • When the oil gets heated, put Cumin seeds and when it gets crisp add green chili and ginger gratings.

  • Saute for a few seconds and then add chopped onions, no need to make it brown, just saute to reduce the moisture content.

  • Now put the corn and saute.

  • Now add all the dry spices, ie. Turmeric, Hing, Garam masala, Salt, Coriander powder, and Red chilly powder.

  • Combine all of them together,

  • and remove them on a plate to cool.

  • Now put it in a multi-mix and make a coarse paste. (keep a few kernels unground to mix later).

  • Take a mixing bowl and put the ground paste and whole corn kernels.
  • Add dry mango powder, freshly cut coriander leaves, Bread crumbs, and Lime juice.

  • Combine all of them and make small lime-sized balls.
  • Flatten it and roll the cutlets in Bread crumbs.

  • Heat a grill pan. and smear oil liberally.

  • Now put the flattened cutlets, on the heated grill pan.

  • Let it roast on a low flame till it gets a golden color, and flip. (smear oil)

  • Let it cook on both sides and become crisp.
NOW THE VERY YUMMY, CRISPY, TANGY, HEALTHY, AND DELICIOUS SWEET CORN CUTLETS ARE READY.
 
EAT IN THE RAINY EVENING AND ENJOY.
A very simple and quick method of mint chutney is given below.
You need only a few ingredients.
  1. Mint leaves-1handful
  2. Fresh coriander leaves-1handful
  3. Green chilies-1-2 numbers.
  4. Curds-1/2 to 3/4 cup
  5. Salt-1/2 teaspoon

METHOD:
  • Put all the above ingredients together in a mixer grinder and grind them to make yummy chutney.
