- BABY CORNS-Generally used for making soups, fritters, and also currys,
- NORMAL OR LOCAL CORNS-Which is not sweet, is used in making, khiss, fritters, and roasted or boiled.
- SWEET AMERICAN CORNS-used in Corn Chats, Pulao, Curry and for Cutlets, Kababs, and Tikki.
- Today we will be using the last one, American sweet corn for our snack.
- Sweet corns are rich in B1, B5 Vitamin C, Manganese & Phosphorus.
- It is rich in Folate and Fiber for digestive health.
- It has Vitamin B12, Iron, and Folic Acid, which helps in combating Anemia.
- It controls cholesterol levels in the Blood.
- It contains Beta Carotene to produce Vitamin A, for Better Vision.
- It prevents hair loss.

- Sweet corn is a starchy grain, a storehouse of Energy.

INGREDIENTS TO MAKE SWEET CORN CUTLETS:-
- American sweet corn-1 big
- Onion-2 medium-sized
- Bread crumbs (fresh or dry)-1 cup 5-6 slices.
- Green chilies-3-4 (finely chopped)
- Lime-1 medium (juice)
- Fresh coriander leaves-2 tablespoons (finely cut)
- Ginger-1 teaspoon (grated)
- Oil-2-3 tablespoons(for garnishing and shallow frying)
- Cumin seeds-3/4 teaspoon
- Turmeric-1/2 teaspoon
- Asafoetida-1/4 teaspoon
- Garam masala-1 teaspoon
- Salt -1 level teaspoon
- Coriander powder-1 teaspoon
- Red chilly powder-1 teaspoon
- Amchur-1 teaspoon
- First of all select good American sweetcorn.
- Cut open the corn by slitting the covering.
- Remove the thin string-like thing on the corn.
- Now remove the kernels from the cob. Keep aside.
- Take Bread slices and powder them in the multi-mix to a powder.
- Peel and cut the onions into small pieces.
- Grate the Ginger piece.
- Wash and chop the fresh coriander leaves.
- Chop the green chilies.
- Take out the juice of the lime.
- Keep all the dry spices ready.
METHOD OF MAKING SWEET CORN CUTLETS.
- Take a frying pan, heat it on a low flame, and add oil to it.
- When the oil gets heated, put Cumin seeds and when it gets crisp add green chili and ginger gratings.
- Saute for a few seconds and then add chopped onions, no need to make it brown, just saute to reduce the moisture content.
- Now put the corn and saute.
- Now add all the dry spices, ie. Turmeric, Hing, Garam masala, Salt, Coriander powder, and Red chilly powder.
- Combine all of them together,
- Now put it in a multi-mix and make a coarse paste. (keep a few kernels unground to mix later).
- Take a mixing bowl and put the ground paste and whole corn kernels.
- Add dry mango powder, freshly cut coriander leaves, Bread crumbs, and Lime juice.
- Combine all of them and make small lime-sized balls.
- Flatten it and roll the cutlets in Bread crumbs.
- Heat a grill pan. and smear oil liberally.
- Now put the flattened cutlets, on the heated grill pan.
- Let it roast on a low flame till it gets a golden color, and flip. (smear oil)
- Let it cook on both sides and become crisp.
- Mint leaves-1handful
- Fresh coriander leaves-1handful
- Green chilies-1-2 numbers.
- Curds-1/2 to 3/4 cup
- Salt-1/2 teaspoon
- Put all the above ingredients together in a mixer grinder and grind them to make yummy chutney.
- SERVE yummy sweet corn cutlets WITH MINT CHUTNEY
