Friends,
Today I shall be showing you, one more Karela (Bitter gourd) recipe namely-Healthy karele ki sabzi.
In the previous post, I had shown you, how to make spicy and crispy karela chips.
This is a SABJI (Gravy) to eat with plain paratha or phulka or you can eat it with Rice and Rasam too.
You already know about the health benefits of KARELA (Hindi name) or BITTER GOURD (English).
There are plenty of vegetables available in the market, but when the question of healthy vegetables comes, The KARELA  is one of them.
The taste of karela is Bitter, as its name is.
So the cooking of this vegetable is a little tricky.
To make it tasty, it has to be balanced with proper spices, ie., using the correct amount of all 4 ingredients. ( sweet, sour, salt, and chilly).
It has to be washed in such a way, that the extra Bitterness goes off.

Let us now see the step-by-step method of making this Karele ki sabzi

 
1)  METHOD OF CUTTING THE KARELA
  • First of all, select good firm green BITTER GOURDS OR KARELA.
  • Wash and cut into two halves, remove seeds, and further cut into two parts.(lengthwise).
  • Now make slices.(you get 1/4 part of a circle)
  • Cut all karelas in the same way.

                        2) METHOD OF PREPARING THE KARELA TO COOK
  • Take a bowl and put the cut pieces of karela in it.
  • Add a teaspoon of salt.

  • Add one glass of water to it.

  • Leave for 1/2 an hour.
  • Now squeeze the pieces and take them out in another bowl.

  • You can throw the water.

3) INGREDIENTS FOR THE KARELE KI SABJI

  1. Bitter gourds-2 big size.(cut in pieces)
  2. Onions-2 medium-sized (finely chopped)
  3. Salt-1 teaspoon or less
  4. Red chilly powder-1 tablespoon (Kashmiri red chilly powder)
  5. Turmeric powder-3/4 teaspoon
  6. Coriander powder-1 tablespoon
  7. Cumin powder-1 teaspoon
  8. Amchur (dry mango powder)-1 tablespoon
  9. Garam masala-1 tablespoon
  10. Oil-3 tablespoons
  11. Fenugreek seeds-1/2 teaspoon
  12. Cumin seeds-1 teaspoon
  13. Fennel seeds-1 tablespoon
  14. Black seeds (kalonji seeds)-1 teaspoon
  15. Black mustard seeds-1 teaspoon
  16. Jaggery powder- 1 tablespoon(optional)
  17. Tomatoes-2 medium (roughly chopped, optional)

4) METHOD OF COOKING THE KARELE KI SABZI

  • Keep a thick-bottomed fry pan on the stove at medium flame.
  • Now add oil to it. (1.5 tablespoons).

  • When the oil is hot add cut pieces of Bitter gourd.

  • Saute the pieces in oil till it starts changing, color.

  • Now remove it and add the rest of the oil to the pan.
  • When hot add whole spices, like Fenugreek seeds, Cumin seeds, Fennel seeds, Mustard seeds, and Black seeds.

  • Saute for a few seconds and then add cut onion slices.
  • Can add 1 green chilly, finely chopped. (optional)

  • Saute for a minute, now add Turmeric and Hing and saute.

  • Now add the dry spices such as Salt, Red chilly powder, Coriander powder, and Cumin powder.

  • Combine them all and saute for a minute.

  • Now add the pre-roasted bitter gourd pieces to the pan.

  • Combine them all nicely.
  • Now is the time to add Aamchur powder and Garam masala.

  • Mix all of them nicely.
  • If you like the taste you can add 2 more ingredients. Tomatoes and Jaggery.

  • cover and cook for one more minute and the sabzi is done.

SERVE THIS YUMMY KARELA SABZI WITH PLAIN PARATHAS, PHULKAS, OR EVEN WITH RICE AND RASAM IT GOES WELL.
