Ingredients needed for making Karela chips
- Bitter gourd-1 big
- Corn flour-3 tablespoons
- Rice flour-2 tablespoons
- Refined flour (Maida)-1 tablespoon
- Turmeric powder-3/4 teaspoon
- Red chilly powder-1 teaspoon or more
- Coriander powder-1 tablespoon
- Garam masala-1 teaspoon
- Salt-1 teaspoon
- Asafoetida- 1/2 tea spoon
- Lime-1 medium
- Curry leaves- 2 springs
PREPARATIONS TO BE MADE FOR MAKING KARELA CHIPS
- Remove the head and tail portions.
- Cut the bitter gourd, lengthwise into two portions and remove the center portions and seeds.
- Now cut them as you like,(small slices as shown or big thin slices)
- Put the pieces in the bowl of water. Add 1 teaspoon salt.
- Leave for 5 mts and then remove the pieces, squeezing excess water.
- Keep it aside.
- Now take all the dry spices and add to the bitter gourd pieces.
- Mix all of them thoroughly and at last add lime juice also.
- Mix them once more.
FRYING METHOD OF SPICY AND CRISPY KARELA CHIPS
- Meanwhile, keep a frying pan with oil for deep frying to heat the flame.
- Let it become hot enough to deep fry.
- Now is the time to add dry flour to the bitter gourd mix.
- As you add the flours mix them nicely so that the bitter gourd pieces get coated with it.
- Now the mix of bitter gourd is ready to go into the frying pan for deep frying.
- Drop the mixture into the frying pan, with your hands and while doing this separate the pieces as far as possible.
- In the same way, fry the rest of the chips.
- Fry them flipping them from time to time, till you get a golden brown color of the chips.
- Remove them with the help of a strainer.
- Put the springs of curry leaves in hot oil and fry till crisp and serve with the YUMMY KARELA CHIPS.
- Remove all of them on a kitchen towel, to remove the extra oil.
