Hello Friends,
Similar to Methi paratha, there is one more very Healthy paratha – namely MORINGA PARATHA
When we think of paratha, we think of Aloo paratha, Gobhi paratha, and Dal paratha. Mooli paratha or Methi paratha, are very common.
Similar to Methi paratha, there is one more very Healthy paratha – namely MORINGA PARATHA.
MORINGA IS COMMONLY KNOWN AS DRUMSTICK.
Each part of the Moringa plant is very nutritious. Flowers, fruits (drumsticks), and leaves are used.
Therefore this is also called SUPER FOOD. It is very easily available and you can easily see it in the
backyard.

The making of this Nutritious Moringa Paratha is very easy and hardly takes 15 mts to prepare this. 
Let us see the ingredients needed.

INGREDIENTS TO MAKE MORINGA PARATHA

INGREDIENTS:(makes 8-10 numbers depending on the size you make ).
  1. Wheat  flour-2 cups
  2. Gram flour (Besan)-1/2 cup
  3. Curds-1/2 cup
  4. Moringa leaves-1 big cup(chopped roughly)
  5. Green chilies-6-8 finely chopped
  6. Oil-6-8 tablespoons (for kneading the dough and Roasting the paratha)
  7. Turmeric-3/4 teaspoon
  8. Asafoetida (Hing)-1/4 teaspoon
  9. Salt-1 teaspoon
  10. Cumin seeds-1 teaspoon
  11. Water-3/4 cup or as needed to knead the dough.
  12. Rice flour-1/2 cup (to use for rolling parathas)

Preparations needed for delicious paratha
  • Take the tender leaves of Moringa and wash them.
  • Remove the hard stems and you can use very soft and tender stems, along with the leaves.

  • Now chop the leaves roughly.
  • Chop the green chilies finely.

  • Take a big plate or bowl.
  • Add Wheat flour, Gram flour, Green chilies (chopped), Turmeric powder, Hing, Cumin seeds, and Salt.

  • Mix all nicely.
  • Now add Curds and Chopped Moringa Leaves.

  • Combine all of them nicely.
  • Start adding water, a little at a time, and knead a soft dough.

  • Now smear 1 tablespoon of oil on it and let it rest for 5 mts. Knead once more before rolling and making it smooth.

Dough for making HEALTHY MORINGA LEAVES PARATHA  is ready.

Rolling of the dough for healthy paratha

Tip-while rolling paratha if you use Rice flour(dry), it gives crispiness to the paratha.
  • You can make a square or triangle paratha.
  • Before rolling divide the dough into the number of balls you need.
  • Smoothen the ball in between your palms and start rolling, using dry rice flour, to about 6-inch diameter round chapati.
  • Apply oil with a brush and sprinkle some dry flour and then fold it into half again apply little oil and dry Rice flour.
  • Again fold it and now roll it in dry Rice Flour and roll it to form a triangle-shaped paratha.

  • Do not allow the rolled parathas to dry, cover it as soon as you roll, if you are not roasting immediately.
Roasting of nutritious Moringa parathas
  • Keep a Tava to heat on a low flame.
  • Allow the Tava to become medium hot and then put the rolled paratha.

  • Let the small bubbles appear on the paratha.

  • Now flip on to another side.

  • Now apply oil to each side of the paratha and roast, till you get brown spots.
A VERY YUMMY, CRISPY, DELICIOUS, NUTRITIOUS, TASTY, MORINGA LEAVES PARATHA IS READY TO SERVE.

note: you can use fresh moringa leaves, in the same way as you use methi leaves.
you can dry the leaves of moringa in the shade till they are crisp and powdery and store them to use in curries. as you use Curry leaves in sambhar or dal.
