HEALTHY JOWAR CRISPS-MURUKKU

Friends, are you still having showers at your place?
It is continuous rain here and I wish to eat something crunchy, healthy snack at Tea time.
At the same time, I want to make it very fast with the available ingredients at home.
I thought of making a very quick snack.
It is HEALTHY JOWAR CRISPS- MURUKKU
Murukku is a snack that is made from Rice flour and fried gram flour or with many other combinations of flour.
You might have come across CHAKKULI, which is spiral in shape and made in individual pieces and fried.
MURUKKU on the other hand is like broken chakkuli pieces and is directly made in oil and so is a quicker process.
Today we will be using JOWAR FLOUR, WITH GRAM FLOUR TO MAKE THIS MURUKKU.
The process is very easy.
It is just combining all the dry ingredients, adding hot oil, kneading, putting in mold, and deep frying.
IT HARDLY TAKES 10-15 MTS
JOWAR :
  1. As you know it is very nutritive.
  2. It is gluten-free, so is good for your health.
  3. It is rich in fiber and so helps in digestion.
  4. It is a good source of Iron, Magnesium and also has high Proteins.
  5. It controls Blood Sugar levels.
  6. It is good for Bone health.
  7. It has Potassium, Phosphorous, Zinc, and Copper and is good for Heart Health.
  8. It improves Energy levels and Boosts circulation.
GRAM FLOUR (BESAN):
  1. Gram flour is a good soluble fiber, which is good for the Heart.
  2. It lowers Diabetes,
  3. It fights against Allergies.
  4. It helps in weight loss.
  5. It helps in skin tightening
NOTE: Always use good healthy groundnut oil to fry. (because it is a deep-fried snack)
This snack is a very old grandma’s recipe.
They were using, RICE FLOUR, which is here replaced by JOWAR FLOUR.(healthier version)
INGREDIENTS FOR MAKING JOWAR MURUKKU

  1. Jowar flour-1 cup
  2. Gram flour-1/2 cup
  3. Sesame seeds or til-1 tablespoon
  4. Oil-1 tablespoon(3 teaspoons)
  5. Red chili powder-1 teaspoon
  6. Carom (om) seeds-3/4 teaspoon
  7. Turmeric powder-1/2 teaspoon
  8. Salt-3/4 teaspoon
  9. Water-3/4 cup or as needed.
KNEADING THE DOUGH FOR HEALTHY JOWAR CRISPS
  • Take a big plate or mixing bowl.
  • Sieve both Jowar and Gram flour in a sieve.

  • Now add all the dry spices, i.e; Red chilly powder, Salt, Turmeric, Carom seeds, and Sesame seeds.

  • Now heat the oil in a small fry pan, till it smokes.

  • Add to the flour mixture.

  • Mix all of them carefully as hot oil has been added to them.
  • Now adding little water at a time knead the flour to form a semi-hard dough.
  • Knead it nicely to get a smooth dough.

MAKING THE MOULD READY FOR MURUKKU
  • Divide it to make two logs.

  • Smear oil in the inside portions of the Chakkuli Mould.

  • Fill the mold with the log of dough as shown.

  • Close the upper lid of the mold and it is ready to be used.
FRYING THE CRUNCHY MURUKKU
  • Keep oil to fry the Murukku in a deep fry pan.
  • Add enough oil to deep fry the JOWAR CRISPS.

  • When the oil is hot, drop a little dough ball. if it comes up immediately, it means the oil is ready to fry.

  • Now with the help of Chakkuli mold, directly drop the Murukku in hot oil.
  • Leave it untouched for about a minute and then flip it to fry on the other side.
  • Repeat the process till you get a golden crispy murukku.
  • Remove on a kitchen towel and when completely cool, store in an air-tight container.

note- always use fresh jowar and gram flour to get the best taste.
