The summer season is on, which means mango season You get lots of raw mangoes to make raw mango chutney.
MANGO is called the king of fruit, whether it is raw, or ripe, it is everyone’s heartthrob.
we can enjoy the fruit in the season, but there is a way to enjoy it even in the off-season.
Do you know how?
Yes, you are absolutely right.
In the mango season, you can peel, grate, add spices and salt with oil, and saute raw mangoes to make Raw mango chutney.
1) By converting the raw mango into Chutney, Pickles, Morraba, and Chunda, and even by drying and making Aamchur (dry mango powder).
2) By converting the ripe mango into Jams, sharbat (juice), and mango leather (drying mango juice)
You also can make Ice-Creams, shakes, lassi, custards, etc for use for a short time period.
Today we are going to use RAW MANGO in our recipe.

  • It has Niacin which is good for cardiovascular health
  • It has healthy cholesterol, so the risk of chronic diseases like Diabetes, heart disease, strokes, and heart attack can be reduced.
  • It helps in boosting metabolism, and so helps to burn more calories, thus helping in weight loss.
  • However eating in moderation is always advised because it can cause indigestion, abdominal pain, or even throat irritation in some people,

Let us now see, how to make Raw Mango Chutney.

INGREDIENTS:-
  1. Raw mango-3-4 in numbers
  2. Turmeric powder-1 teaspoon
  3. Red chilly powder-2 teaspoons
  4. Salt-1.5 teaspoon
  5. Roasted Methi (fenugreek)seeds powder-3/4 teaspoon
  6. Asafoetida (hing)-1/2 teaspoon
  7. Oil-3 tablespoon
  8. Mustard seeds-1 teaspoon

PREPARATIONS NEEDED FOR MAKING RAW MANGO CHUTNEY:-

  • Select fresh, firm good quality Raw Mangoes.
  • Wash and dry it by wiping it with a cloth.

  • Now peel them. (do not throw the peelings)

  • Reserve it to use as chutney. (recipe given after this recipe)
  • Now grate the raw mangoes.

METHOD OF MAKING RAW MANGO CHUTNEY:-

  • Take a pan and heat the oil on a low flame.

  • Add mustard seeds, when the oil is hot, and then add Hing to that.
  • Let all the mustard seeds crackle.

  • Now add grated raw mango to the pan.

  • Saute. for 1 -2 mts.

  • Now add all the remaining ingredients, namely red chilly powder, Turmeric powder, Salt, and Roasted fenugreek powder to the pan.

  • Combine all of them and saute.

  • You have to saute until the oil oozes back into the chutney.

  • This is the signal that the chutney is done.
Note-At this stage you can taste for salt and chilly. You can add to adjust.
  • If very hot can add jaggery to it.
  • Now tasty, hot delicious Raw mango chutney is ready to use.
  • You can eat with RICE, CHAPATI, POORIS ETC.
  • OU can store this for 2-3 months if refrigerated.
  • Do not use wet spoons to serve.
  • Store in an air-tight bottle.
USING RAW MANGO PEELINGS FOR CHUTNEY
INGREDIENTS FOR CHUTNEY:-

  1. Raw Mango peelings of 3-4 mangoes.
  2. Onion-1 big (sliced roughly)
  3. Green chilly-3-4
  4. Ginger-1/2 inch piece
  5. Garlic-3-4 cloves
  6. Crystal salt-1/2 tea sp[oon
  7. Fresh coriander leaves-handful
  8. Curry leaves-8-10

PROCEDURE OF MAKING CHUTNEY:-

  • Take a mixer grinder and put the Mango peelings, Green chilies. Ginger and garlic cloves.

  • After grinding, add onions, salt, and grind.

  • Now add 2-3 tablespoons of Fried grams and grind finally.

                                                  Serve with Dosa, Idly, Chapati, Rice, etc.
