VERY SPICY RAW MANGO CHUTNEY

Let us now see, how to make Raw Mango Chutney.

- Raw mango-3-4 in numbers
- Turmeric powder-1 teaspoon
- Red chilly powder-2 teaspoons
- Salt-1.5 teaspoon
- Roasted Methi (fenugreek)seeds powder-3/4 teaspoon
- Asafoetida (hing)-1/2 teaspoon
- Oil-3 tablespoon
- Mustard seeds-1 teaspoon
PREPARATIONS NEEDED FOR MAKING RAW MANGO CHUTNEY:-
- Select fresh, firm good quality Raw Mangoes.
- Wash and dry it by wiping it with a cloth.
- Now peel them. (do not throw the peelings)
- Reserve it to use as chutney. (recipe given after this recipe)
- Now grate the raw mangoes.
METHOD OF MAKING RAW MANGO CHUTNEY:-
- Take a pan and heat the oil on a low flame.
- Add mustard seeds, when the oil is hot, and then add Hing to that.
- Let all the mustard seeds crackle.
- Now add grated raw mango to the pan.
- Saute. for 1 -2 mts.
- Now add all the remaining ingredients, namely red chilly powder, Turmeric powder, Salt, and Roasted fenugreek powder to the pan.
- Combine all of them and saute.
- You have to saute until the oil oozes back into the chutney.
- This is the signal that the chutney is done.
- If very hot can add jaggery to it.
- Now tasty, hot delicious Raw mango chutney is ready to use.
- You can eat with RICE, CHAPATI, POORIS ETC.
- OU can store this for 2-3 months if refrigerated.
- Do not use wet spoons to serve.
- Store in an air-tight bottle.
- Raw Mango peelings of 3-4 mangoes.
- Onion-1 big (sliced roughly)
- Green chilly-3-4
- Ginger-1/2 inch piece
- Garlic-3-4 cloves
- Crystal salt-1/2 tea sp[oon
- Fresh coriander leaves-handful
- Curry leaves-8-10
PROCEDURE OF MAKING CHUTNEY:-
- Take a mixer grinder and put the Mango peelings, Green chilies. Ginger and garlic cloves.
- After grinding, add onions, salt, and grind.
- Now add 2-3 tablespoons of Fried grams and grind finally.
Serve with Dosa, Idly, Chapati, Rice, etc.
