It is mango season, let us use this HERO.
Today’s Recipe is all time favorite mango rice or mavinkai chitranna ( in Kannada)
Those living in the southern part of India are well aware of this dish, but in the northern part of India, they may be not.
So, I thought to introduce them to a very simple, yet very tasty sour and spicy Rice preparation, which people enjoy for both Breakfast and Lunch or dinner.
At times, we have plain cooked rice but no vegetables, at that time we can simply make a Garnishing by using Oil, Mustard, Hing, Green chilies, Curry leaves, Peanuts, Chana dal, and Urad dal.
If we have mango chutney, (as shown in my previous mango chutney post) we can mix it with rice and garnishing. (except green chilies)
In case we have a raw mango we can use another method as we make lemon rice.
Yes, we can extract the juice of raw mango and use it instead of lime juice, it tastes awesome.
let us see the ingredients for making Mango Rice.
INGREDIENTS NEEDED TO MAKE MANGO RICE:-
- Cooked rice-1 big bowl
- Mango(raw)-1-grated
- Fresh coconut-1/3 cup
- Peanuts (groundnuts)-2 tablespoons
- Chana dal-1 tablespoon
- Urad dal-1 tablespoon
- Oil-1-1/2 tablespoon
- Mustard seeds-1 teaspoon
- Asafoetida (Hing)-1pinch
- Turmeric-3/4 teaspoon
- Salt-1 teaspoon
- Green chilies-3-4 in numbers
- Curry leaves-8-10
- Coriander leaves-hand full
INSTRUCTIONS FOR MAKING MANGO RICE:-
- Select a raw but firm and fresh mango.
- Wash and peel the mango.
- Now grate it in a grater.
- Take it in a bowl and add a teaspoon of salt to it.
- Now take the mango gratings from the bowl in your fist and squeeze to get the juice.
- You will get a good amount of juice from it, keep it aside.
- Cut green chilies, Curry leaves and Coriander leaves.
- Grate fresh coconut and keep aside.
- Cook a bowl of rice (any rice-short or long grain Rice.)
METHOD:
- Keep a frying pan on low flame to heat.
- Put 1-2 tablespoonfuls of oil into it.
- When the oil heats add mustard seeds and hing.
- After the mustard crackles add peanuts.
- When peanuts are 1/2 done, add Chana dal and Urad dal.
- Now add cut chili and Curry leaves.
- Now put off the flame and add Cooked Rice.
- Combine all of them together.
- Now put the raw mango juice (salt already mixed), and mix well.
- Add cut coriander leaves and coconut gratings.
DELICIOUS, SOUR, AND SPICY MANGO RICE OR MAVINKAI CHITRANNA (IN KANNADA)
is ready to eat at any time.
