VARIATIONS OF LASSI IN SUMMER COOL DRINKS (PART-2)

 HI, FRIENDS, IN MY PREVIOUS POST WE HAD SEEN ABOUT SETTING CURDS AND MAKING BASIC BUTTERMILK AND ITS VARIATIONS.
Today, I am going to show you the YUMMY LASSI, Which has universal liking.
When you make LASSI, with whole-fat milk curd,  it almost tastes like melted ice cream, with different flavors.
Basically, LASSI IS FROM PUNJAB.
WHEREVER YOU GO IN PUNJAB, PEOPLE OFFER LASSI IN A BIG GLASS AS A WELCOME DRINK.
THE HERO OF OUR RECIPE IS CURDS.(WHOLE MILK CURD).
CURD: Its health benefits.
  • It is a storehouse of calcium that helps to strengthen your bones.
  • It improves digestion and reduces the heat of the body.
  • It helps in building immunity in the body.
  • It reduces acidity in the body.
  • It reduces high Blood pressure.
  • It also prevents vaginal infections.
  • It is needed for healthy and glowing skin.
  • It removes dark spots and also dandruff from the scalp.
SO USING CURD IS VERY BENEFICIARY.
Let us first see how to set curds for LASSI.(common to all types of lassi.)
INGREDIENTS:
Whole milk-1/2 OR 1 Liter.
Fresh curds(not sour)-1 -2 teaspoons.
Method:
  • Take a milk pan. Heat the pan on low flame.
  • Add a teaspoon of water to it and then pour the entire quantity of milk into it.
  • Keep the flame low and let it boil.’
  • Once it is done, put off the flame.

  • Cool to room temperature, when touched by hand it should be Luke warm, not Hot.
  • Now the milk is ready for setting curds.
  • Add curds to it and combine it nicely with milk, using a spoon.

  • KEEP IT COVERED FOR 6-7 HOURS OR OVERNIGHT.

The time of setting depends on the WEATHER.
THE HOTTER THE TEMPERATURE, THE PROCESS IS FASTER, AND VICE VERSA.
So the curd is ready to use now.

LASSI can be broadly divided into two main types:
1) SWEET LASSI: 
This  LASSI is made from thick curds, sugar, cardamom, and a pinch of salt.
2) SPICY OR MASALA LASSI :
This LASSI is also made from thick curds but uses spices and herbs, instead of sugar.
 

Let us make the BASIC SWEET LASSI.

We will be doing the variations from this BASIC SWEET LASSI.
INGREDIENTS;

  1. Freshly set curds- 1/2 liter
  2. Sugar powder-4 tablespoon (or less0
  3. Cardamoms-4-5
  4. Salt-a small pinch
METHOD:
  • Take the freshly set curds in a vessel or bowl.
  • Powder the sugar with the cardamom seeds (skin removed)
  • Add a pinch of salt to the curds.
  • Add the powdered sugar also to the curds and churn it with a hand blender, to get a homogenized liquid.

  • THE BASIC SWEET LSSSI IS READY.

KEEP THE NUTS READY, SOAK THEM IN WATER FOR 1 HOUR, OR CAN SOAK THEM IN HOT WATER AND USE THEM EARLIER.

  • If you want to serve it as it is, then just add 4-5 Ice cubes to it. (per glass)
  • If you have 1 hour’s time then you can even chill it in the refrigerator and serve it.
VARIATIONS OF SWEET LASSI
After making BASIC SWEET LASSI, either keep it in the refrigerator or keep some ICE CUBES ready.
Today we will be making 4 types of SWEET LASSI.
  1. BANANA LASSI
  2. KESAR BADAM LASSI
  3. KAJU  PISTA LASSI
  4. WALNUT CHOCO LASSI
  5. MANGO LASSI
1)  BANANA LASSI

INGREDIENTS:

  • Sweet Lassi- 1 cup
  • Banana (ripe)-1 number
  • Cashew-5-7 (pre-soaked)
  • Ice cubes-3-4 numbers.
METHOD:
  • In the blender jar put, Cut Banana, Soaked Cashews, Ice cubes and churn once,

  • Now add the sweet Lassi you made earlier.
  • Churn once more for a few seconds and it is done.

  • Pour the Lassi into the glass you want to serve.
  • SERVE IN A GLASS AND DECORATE IT WITH A FEW PIECES OF BANANA&TUTTI FRUITY.

2) KESAR BADAM LASSI
 
INGREDIENTS:

  1. Sweet Lassi-1 cup
  2. Soaked Badam (Almonds)-6-8  Skin removed.
  3. Saffron strands-8-10 in number (soaked in 2 teaspoons hot milk)
  4. Ice cubes-3-4 in numbers
METHOD:
  • In the blender jar put, the almonds. (soaked and skin removed)
  • Add the saffron -milk.(pre-soaked in hot milk)
  • Blend to a fine paste.

  • Now, to the same jar, add ice cubes and Sweet Lassi.
  • Blend for 30 seconds.
  • Pour into the glass, you want to serve.
SERVE IN A GLASS AND DECORATE IT WITH A FEW PIECES OF ALMOND SLICES &SAFFRON STRANDS,

3) KAJU PISTA LASSI
INGREDIENTS:

  1. Sweet Lassi-1 cup
  2. Kaju (Cashew)-4-5 soaked in water
  3. Pistachio (Pista)
  4. Ice cubes-3-4 in numbers
METHOD:
  • In a mixer jar put soaked Cashews and pistachio.
  • Remove the skin from the pistachio, before blending. (this gives a beautiful green color to the lassi)
  • Grind to a fine paste.

  • Now add ice cubes to the jar and also add sweet Lassi to it.
  • Churn for 30 seconds and then pour it into a serving glass.
  • NOTE: You can add food color (green) optional.
SERVE IN A GLASS AND DECORATE IT WITH A FEW PIECES OF PISTACHIO SLICES AND CASHEW PIECES.

4) WALNUT CHOCO LASSI
INGREDIENTS:

  1. Sweet Lassi -1 cup
  2. walnuts -a few pieces
  3. Dairy milk chocolate-1-2 or more(4/2 inch piece)
  4. Milk-2 tablespoon
  5. Ice cubes-3-4 numbers
METHOD:
  • Take a vessel. add some water and boil.(1/2 filled)
  • Now in another small bowl add the broken pieces of chocolate and little milk.
  • Put the small bowl in the boiling water pan.(double boiling method)

  • Slowly move the chocolate in the milk to dissolve.
  • When chocolate dissolves, add this to a blender jar.

  • Also, add the sweet lassi and ice cubes.
  • Churn for 30 seconds and it is done.
  • Pour it into a serving glass.
SERVE IN A GLASS AND DECORATE IT WITH A FEW GRATINGS OF CHOCOLATE AND A FEW  WALNUT PIECES.

SPICY OR MASALA LASSI
 
MAKING OF BASIC LASSI WILL BE THE SAME BUT NO SUGAR POWDER IS ADDED
Just add all the ingredients with the spices and churn.
INGREDIENTS:
  1. Curds-1 cup
  2. Ice cubes-4-5
  3. Roasted cumin powder-1/2 teaspoon
  4. Roasted  Carrom seeds (ajwain)powder-1/2 teaspoon
  5. Black pepper powder-1/4  teaspoon (optional)
  6. Black salt-1/2 teaspoon
  7. Salt-1/4 teaspoon
  8. Fresh mint leaves-8-10 in numbers
  9. Asafoetida (hing)- a small pinch
METHOD:
  • Put all the ingredients in the jar of mixer grinder except the curds.
  • Blend for a few seconds.
  • Now again churn it with curds and spicy or masala lassi is ready.
  • Put it in a serving glass and serve.
SERVE IN A GLASS AND DECORATE IT WITH A FEW FRESH MINT LEAVES AND ROASTED CUMIN POWDER.
