SWEET JAGGERY DISKS (KAJJAYA)

HI FRIENDS, SWEET JAGGERY DISKS, You may be wondering what is this?
I will introduce this to you. This is a new name for a very old and authentic snack, rather we can call it KAJJAYA OR ANARSA.
Actually, both are made using Rice and jaggery as the main ingredients.
In southern India, it is famous as kajjaya and is made by using freshly ground Rice powder. For this, rice is washed and dried on a cloth till you don’t feel wet when you touch it and then ground to a fine powder and used.
In northern India, it is famous as  Anarsa and is made by soaking the rice for three days (changing its water daily) and then dried on a  cloth  and put in the mixer to make Rice powder and then used.
This snack is usually made in festivals as DEEPAVALI.
Today I will be showing you a very simple and easy way to make this kajjaya in a different style and texture WITH A TWIST.
let us see what all we need to make this snack.
INGREDIENTS TO MAKE SWEET JAGGERY  DISKS

  1. Rice flour -1 cup
  2. Jaggery-3/4 cup
  3. Coconut scrapings-1/2 cup
  4. Curds-1/4 cup
  5. Banana-1 ripe(bigger variety)
  6. Maida (all-purpose flour)-2 teaspoon(optional)
  7. White sesame seeds-1 tablespoon(roasted)
  8. Ghee-1 tablespoon
  9. Water-1/4 cup
  10. Cardamoms-5-6 powdered
PREPARATIONS TO BE DONE FORSWEET JAGGERY DISKS
  • First of all, take 1.5 cups of Rice, wash it 3-4 times, and strain.
  • When the extra water drains off, spread it on a cotton towel cloth to dry.
  • After it drys, grind it to a fine powder and use this.
  • Now take a blending jar and put, coconut scrapings, banana, and curds.

  • Grind them to a fine paste and keep them aside.

         METHOD TO MAKE THE DOUGH FOR SWEET JAGGERY DISKS
 
  • Take a thick bottom fry pan and add 1/4 cup water to that.
  • Heat it on a medium flame.

  • Now put the Jaggery and let it dissolve.

  • After dissolving fully, you will see too much froth on the surface.

  • Go on stirring it till you get 1 string consistency. (if you put it in water it should form a soft lump and not get dissolved in water.

  • Now put the ground paste and cook for few more seconds and check again in water.

  • Now add the Rice flour after putting off the flame.
  • Add the rice flour slowly and stop adding, if you feel the dough doesn’t need all the flour.IMG 3534
  • Combine all nicely to form a soft pliable dough.

  • Add cardamom powder and mix.
  • At this stage add little ghee to it and knead the dough.
THE SOFT DOUGH IS READY. THIS CAN BE STORED AND USED WHENEVER YOU NEED IT.
  1. ROLLING THE DOUGH FOR SWEET JAGGERY DISKS
  2. To roll the dough you need nonstick paper as parchment paper or polythene sheet.
  3. Smear some sesame seeds and roll a small portion of the dough.
  4. Sprinkle some seeds on top of the rolled dough and roll once more lightly.

  • Now take a cookie cutter and cut the dough.

  • The outer portion looks like the shape of a Doughnut.

  • You can also make small poori shape.
  • For that take a small lemon-sized dough, roll it, after rolling it on sesame seeds.

         FRYING THE SWEET JAGGERY DISKS
  • Heat oil in a frypan,

  • Keep the flame medium and fry the rolled poori, one at a time.
  • As the dough is pre-cooked, no need to fry it for a long time.
  • Press them in between two ladles and remove them on a plate and keep it in a slanting position to drain extra oil.
