YES FRIENDS, Today I am going to show you a very popular yet very tasty  recipe from North India,
which you will find in almost every home in the winter season.ALOO METHI MATAR TAMATAR CURRY.
In winter you get good Green peas (Matar) and good  Fenugreek (Methi) leaves, which when combined with Aloo (potato) and Tomato give a very -very yummy taste. Vegetables combine to give a very delicious taste.
Aloo Methi Matar Tamatar curry is a superb combination that you must try. All these vegetables come in winter and you know that seasonal vegetables are the best.
ALOO (POTATOES):
  • They are an excellent source of vitamin C, Fiber, Potassium, B vitamins, Copper, Manganese, etc.
  • It is a good source of antioxidants.
  • It reduces Inflammation, has heart-healing properties, improves brain health, promotes digestion, is good for bones, and skin, and for puffy eyes and also dark circles of the eyes, and dry skin, and also treats sunburns.
IT IS EXTREMELY VERSATILE, IT CAN BE COMBINED WITH ALMOST ALL PREPARATIONS AND IT ENHANCES THE TASTE.
 
FENUGREEK LEAVES(METHI):
  • Methi leaves are low in calories and so can be taken in large quantities.

INGREDIENTS FOR ALOO METHI MATAR TAMATAR

  1. Potato-2 big
  2. Fenugreek leaves (methi)-1 bowl
  3. Fresh peas-1 cup
  4. Tomatoes-2 big.
  5. Onion-2 medium
  6. Green chilies-2 nos
  7. Ginger 1inch piece
  8. Garlic-3-4 cloves
  9. Oil-2 tablespoon
  10. Cumin seeds-1/2 teaspoon
  11. Mustard seeds-1/2 teaspoon
  12. Turmeric-3/4 teaspoon
  13. Red chilly powder-1 teaspoon
  14. Coriander powder-1.5 teaspoon
  15. Garam masala-1 teaspoon
  16. Salt-1 teaspoon

PREPARATIONS TO BE DONE FOR ALOO METHI MATAR TAMATAR

  1. De-seed the Fresh peas.
  2. Wash and chop the fresh Fenugreek leaves.
  3. Peel and cut the onions into small pieces.
  4. Wash and peel, then cut potatoes into small cubes.
  5. Wash and cut a tomato into small pieces.
  6. Chop green chilies, Ginger, and Garlic into small pieces.
  7. Keep all the spices ready.

METHOD OF COOKING ALOO METHI MATAR TAMATAR 

  • Keep a thick bottom fry pan to heat on a medium flame.
  • When hot, add oil to it.  Reduce the flame.
  • Add Mustard seeds and cumin seeds,  roast a little, and immediately add Ginger, Garlic, and Green chili.
  • Saute till the raw smell of Ginger and garlic goes off.

  • Now add the cut Onions and roast till the Onions become pink and transparent.

  • When done, add the cut Potatoes.

  • Keep it covered for about 3-4 mts.

  • The potato is half cooked, add shelled Fresh Peas to it and mix.

  • Now add the chopped Fenugreek leaves and saute.

  • Add the dry spices, such as Red chilly powder, Turmeric powder, Coriander powder, Salt, and Garam masala.

  • Cook for a further 3 mts and now add cut tomatoes.

  • Saute for 2 mts, covered and the curry is ready.

NOTE: You can add Amchur powder or lemon juice if you like a sour taste in curry.

 You can add little water if you do not want to have a dry curry.
