Let us see the ingredients needed for making Plum Cake:-
- Wheat flour-230 grams (1.5 cups)
- Jaggery-1/2 cup powdered or grated
- Milk-3/4 cup (room temperature).
- Water-1/2 cup
- Fresh lime juice-1 teaspoon
- Butter melted-1/2 cup or vegetable oil-1/2 cup.
- Baking powder-1.5 teaspoon
- Baking soda -1/2 teaspoon
- Vanilla essence-1/2 teaspoon
- Mixed spice powder each 1/4 tea spoon-cloves, cinnamon, and ginger powders.
- Almonds-20 in numbers
- Cashew-20 numbers
- Walnuts-few pieces
- Dry dates- 5 numbers
- Raisins-2 tablespoon
- Currants-2 tablespoon
- Tutty fruity- different colors such as Red, Orange, Green, and yellow
- Red cherries-
PREPARATIONS NEEDED TO BE DONE TO MAKE PLUM CAKE.
- First of all, we need to cut the dry fruits into small pieces. (not too small)
- Take 3/4 glass of milk at room temperature and put a teaspoon of lemon juice to it.
- Take a pan, keep on low flame
- Now take 1/2 cup of water, add to the pan, and also add 1/2 cup of powdered jaggery to that.
- Let it boil till all the jaggery gets dissolved.
- NOW STRAIN THE SYRUP.
- Again keep the pan with the syrup on low flame and now add all the dry fruits to it.
- Allow it to boil for 3-5 mts and put off the flame
- LET IT COOL COMPLETELY
- Transfer to a mixing bowl.
- Add the colored tutty fruity and cherries. (keep some to decorate on top)
- Spice mix-Cinnamon, Cloves, and Ginger powders.
- Add 1/2 cup of Butter(melted)
- Vanilla essence-1/2 teaspoon and combined them all with the help of a spatula.
- Sieve the wheat flour along with the baking powder and baking soda,
- Now sieve once more directly in the mixing bowl.
- Start mixing them with a spatula in cut and fold method/
- It will be a thick dough so now start adding the buttermilk which you had prepared earlier till you get a thick batter,(as shown).
- PRE-HEAT THE OTG FOR 10 MTS.
- Meanwhile, Take a 6-inch cake pan.
- Take butter or parchment paper and cut a circular round paper (6-inch diameter).
- Now smear butter inside the pan and put the paper at the bottom and smear Butter once again on the paper too.
- PAN IS READY TO KEEP IN THE OTG
- Pour the cake mix into the pan.
- TAP IT SO AS TO REMOVE THE AIR POCKET FROM THE BATTER.
- Now put the Tutty-Fruity, cherries, and cashews to decorate on top of the cake.
- Now keep the cake pan with the batter in the OTG AND BAKE FOR 45 TO 50 mts.
- TEST WHETHER DONE OR NOT BY INSERTING A KNIFE OR A TOOTHPICK. IF IT COMES CLEAR, IT IS A SIGN THAT CAKE IS COOKED NICELY,
- Remove from the OTG and keep it, as it is, to cool.
- After the cake is totally cooled, take a knife and move along the edges.
- TAKE A PLATE KEEP IT ON TOP OF THE CAKE AND TURN UPSIDE DOWN.
- you will see that the cake comes out very easily. REMOVE THE BUTTER PAPER..
- flip again and your PLUM CAKE IS READY
- Use a bread knife to cut the cake and enjoy.
