DEAR FRIENDS, HAPPY CHRISTMAS TO ALL MY VIEWERS, 
Today, we will be making a healthy PLUM CAKE  with NO MAIDA, NO SUGAR, NO EGG, NO ALCOHOL, and requires NO SOAKING (of dry fruits).
That means, in a way, it can be made instantly, without much preparation, with the ingredients available in almost all homes. It is very easy to make.
The Plum Cake is very Delicious as well as very Nutritious, as we use many Dry Fruits which are loaded with Healthy Nutritive values.

Let us have a quick look at the main ingredients used and their health benefits.
 1) ALMONDS; They have lots of healthy Fats, Fiber, Proteins, Magnesium, and Vitamin D.
It Lowers blood sugar Levels Reduces blood pressure and lowers cholesterol levels.
It also reduces hunger and thus helps in Weight loss.
2) CASHEWS: They are low in sugar, and have Fiber and Heart-healthy fats and plant proteins. They are loaded with copper, magnesium, and manganese.
They are important for Brain health, Immunity, Energy production, and bone health.
3) SULTANAS{DRIED SEEDLESS GRAPES: also called RAISINS OR KISHMISH. is the product of a seedless variety of grapes and is a very commonly used dry fruit.
It improves Blood sugar and Digestive Health, decreases Inflammation, and lowers Blood pressure, but is high in sugar and calories so should be taken in moderation.
4) CURRANTS: (dried seedless black grapes)DRIED CURRANTS are tiny and bluish-brown/black with distinct wrinkles.
They are rich in Fiber, Copper, and magnesium.
It’s tiny size and thin skin give a good taste to Bakery products.
You can replace or use the normal raisins
5) DATES: IT IS AN EXCELLENT NATURAL SWEETENER.(khajoor)
It is full of carbohydrates for a high-energy diet. has high Fiber for digestion, proteins, vitamins, and also minerals. It has Pottasium, Copper, and manganese.
Dates are good for bone health. For gaining weight, Iron to prevent Anemia, Good for healthy skin, It has a low Glycemic index so can be taken in Diabetes and reduces Inflammation.
6) WALNUTS: They are rich in Antioxidants, a Super plant source of Omega-3, which Decreases Inflammation. Very healthy for the Gut and good for Weight control, manages type 2 Diabetes, lowers Blood Pressure, and reduces the risk of cancers.
APART FROM THIS CINNAMON, CLOVES, AND GINGER POWDER ARE USED.
Instead of REFINED FLOUR, WE ARE USING WHOLE WHEAT FLOUR.
Instead of SUGAR, we are using JAGGERY.

Let us see the ingredients needed for making Plum Cake:-

  1. Wheat flour-230 grams (1.5 cups)
  2. Jaggery-1/2 cup powdered or grated
  3. Milk-3/4 cup (room temperature).
  4. Water-1/2 cup
  5. Fresh lime juice-1 teaspoon
  6. Butter melted-1/2 cup or vegetable oil-1/2 cup.
  7. Baking powder-1.5 teaspoon
  8. Baking soda -1/2 teaspoon
  9. Vanilla essence-1/2 teaspoon
  10. Mixed spice powder each 1/4 tea spoon-cloves, cinnamon, and ginger powders.
DRY FRUITS:

  1. Almonds-20 in numbers
  2. Cashew-20 numbers
  3. Walnuts-few pieces
  4. Dry dates- 5 numbers
  5. Raisins-2 tablespoon
  6. Currants-2 tablespoon
  7. Tutty fruity- different colors such as Red, Orange, Green, and yellow
  8. Red cherries-

PREPARATIONS NEEDED TO BE DONE TO MAKE PLUM CAKE.

  • First of all, we need to cut the dry fruits into small pieces. (not too small)

  • Take 3/4 glass of milk at room temperature and put a teaspoon of lemon juice to it.

  • Take a pan, keep on low flame
  • Now take 1/2 cup of water, add to the pan, and also add 1/2 cup of powdered jaggery to that.

  • Let it boil till all the jaggery gets dissolved.

  • NOW STRAIN THE SYRUP.

  • Again keep the pan with the syrup on low flame and now add all the dry fruits to it.

  • Allow it to boil for 3-5 mts and put off the flame
  • LET IT COOL COMPLETELY
  • Transfer to a mixing bowl.

  • Add the colored tutty fruity and cherries. (keep some to decorate on top)
  • Spice mix-Cinnamon, Cloves, and Ginger powders.

  • Add 1/2 cup of Butter(melted)
  • Vanilla essence-1/2 teaspoon and combined them all with the help of a spatula.

  • Sieve the wheat flour along with the baking powder and baking soda,

  • Now sieve once more directly in the mixing bowl.

  • Start mixing them with a spatula in cut and fold method/

  • It will be a thick dough so now start adding the buttermilk which you had prepared earlier till you get a thick batter,(as shown).

  • PRE-HEAT THE OTG FOR 10 MTS. 
  • Meanwhile, Take a 6-inch cake pan.
  • Take butter or parchment paper and cut a circular round paper (6-inch diameter).

  • Now smear butter inside the pan and put the paper at the bottom and smear Butter once again on the paper too.

  • PAN IS READY TO KEEP IN THE OTG
  • Pour the cake mix into the pan.
  • TAP IT SO AS TO REMOVE THE AIR POCKET FROM THE BATTER.
  • Now put the Tutty-Fruity,  cherries, and cashews to decorate on top of the cake.

  • Now keep the cake pan with the batter in the OTG AND BAKE FOR 45 TO 50 mts.

  • TEST WHETHER DONE OR NOT BY INSERTING A KNIFE OR A TOOTHPICK. IF IT COMES CLEAR, IT IS A SIGN THAT CAKE IS COOKED NICELY,

  • Remove from the OTG and keep it, as it is, to cool.

  • After the cake is totally cooled, take a knife and move along the edges.

  • TAKE A PLATE KEEP IT ON TOP OF THE CAKE AND TURN UPSIDE DOWN.

  • you will see that the cake comes out very easily. REMOVE THE BUTTER PAPER..

           you can cook in the pressure cooker, or microwave oven with convection mode or OTG.

    Yes, you can vey we’ll bake in oven if it has convention mode.
    See my B bread recipe, in that I have used a pressure pan with common salt in it.If you have old kadhai ,just pre heat covered, for 10 mts and put a stand and directly the cake pan to bake ,covered for 40 to 50 mts.check after 40 mts.
