SALTY AND SPICY PEANUTS VARIETIES, YES DEAR FRIENDS HOW ABOUT THIS? This is a wonderful nut that no one can resist. 

PEANUTS  also known as GROUNDNUTS are one of the substitutes for ALMONDS in our cooking, hence
is called “BADAVAR BAADAMI” which MEANS POOR MANS ALMOND.
 
It has many nutrients, which are necessary for our day-to-day life, such as vitamin B6, VITAMIN -E,  Zink,  Magnesium, Phosphorous, Calcium, Iron, Copper, Manganese, Selenium, etc. 
 
PEANUTS have Healthy Fats, Proteins, and Fiber, so keep us full for a longer time and lower appetite thus reducing cravings and ultimately helping in weight loss
 
It reduces bad cholesterol and thus increases good cholesterol so is heart-friendly.
 
It is a good brain food that boosts memory.
 
 It has a low glycemic index and so is Diabetic friendly.
 
 It is also good for the Skin and Hair.
 
Apart from their nutritional benefits, PEANUTS,  are wonderful in taste, whether taken RAW, BOILED WITH SALT, OR ROASTED. (WHOLE).
 
A number of dishes are incomplete without PEANUTS, such as POHA SABUDANA KHICHADI, LEMON RICE, PULIOGARE, FRIED MIXTURES OR NAMKEEN, etc
 
So is all time favorite TIME PASS FOR ALL AGES.
 

Today I am going to show you 4 varieties of SALTY AND SPICY PEANUTS OR MASALA PEA NUTS FOR MUNCHING.

 
1) SALTED PEANUTS
 
2) SPICY ROASTED PEANUTS
 
3) CONGRESS PEANUTS (KARNATAKA STYLE)
 
4) CONGRESS PEANUTS (IYENGARI  STYLE)

Let us see the ingredients needed for salty and spicy peanuts.

1) SALTED PEANUTS
 
You might have seen while Travelling on Trains and buses, many vendors sell salted peanuts, making small paper cones as time passes. You might have taken it too.
 
This is one of the easiest ways of making Salty, Crunchy, and tasty Peanuts.
 
 
INGREDIENTS:

  1. Peanuts-1 cup
  2. Salt-2 teaspoon
  3. Water-4 cups.
  4. Table Salt-750 grams.

METHOD of making salty peanuts

  • Take a vessel and add 4 cups of water to that.
  • Keep the water to boil on medium heat adding salt to it.

  • When the water starts boiling add the peanuts to it, and reduce the flame.

  • Boil till the peanut starts wrinkling (the skin) and the water starts getting discolored.(5-8 mts)
  • Put off the flame, cover and keep for 1 minute.

  • Now strain the water.

  • Spread it on a towel to dry a bit.

  • Heat a thick bottom fry pan or a pressure pan (cooker).
  • Add about 500 -750 grams of table salt.

  • Stir the salt with a ladle so that all the salt gets heated for about 2-3 Mts.
  • Now add the dried peanuts and start roasting continuously, so that all the peanuts get an equal amount of heat

  • This may take about 8-12 mts and you will see that the color of the peanut changes and it becomes whitish and the skin comes out very easily.
  • This is the sign that peanuts are done.

REMOVE ALL THE PEANUTS THROUGH A STRAINER.
 
WONDERFUL, TASTY, CRUNCHY.  SALTY, DELICIOUS PEANUTS ARE READY.              
 
2) SPICY ROASTED PEANUTS
PEANUTS are first roasted and spices are added to them, which gives a thin coat to the nuts making them spicy, crunchy, and yummy in taste.
 
DO YOU KNOW, CHINTHAMANI, in the state of KARNATAKA, is a place which is very famous for its SPICY ROASTED PEANUTS. We can see many Small Scale Home Industries, where they do all the procedures by machines. Here I am showing a very easy method of making the  SPICY ROASTED PEANUTS. Let us see what ingredients we need to make it.
 
INGREDIENTS

  1. Peanuts-1 cup
  2. Salt-1 teaspoon
  3. Green chilly powder or paste-1 tablespoon
  4. Fenugreek (methi) powder-3/4 teaspoon
  5. Turmeric powder-3/4 teaspoon
  6. Lime (juice)-1 number
  7. Asafoetida-1 peanut size
  8. Water-2-3 teaspoon
METHOD
  • For making the SPICY ROASTED PEANUTS, we have to roast the peanuts till they are crispy.
  • Take a thick bottom fry pan.
  • Keep heating on a medium flame.

  • Reduce the heat and put the PEANUTS to roast, keep on roasting, moving them with a ladle, until they become crispy and smell good.
  • You will see that the skin starts leaving the nuts.
  • At this stage stop roasting.

  • In a bowl mix all the spices, namely Salt, Green chilly powder, Fenugreek powder, turmeric powder, and Lime juice. Asafoetida and Water.
  • Now put this paste on the roasted nuts, mix, and keep it for 10 mts.
  • Heat a frying pan put the peanuts (spice-mixed peanuts), and roast on a low flame till all the humidity of the previously mixed spice goes off.

  • The peanuts dry with a very thin coating of spice.

NOTE:1) Always store in an air-tight container.
            2)  Always select good fresh groundnuts, so that you can keep them for a longer time.
            3)  No oil is used so can be taken safely. as it is healthy.
