HELLO FRIENDS, Today I am going to show you 2 spicy and tasty chutneys namely RAW TOMATO CHUTNEY and MINT CORIANDER CHUTNEY.

Chutney as an individual is not a complete dish, but an accompaniment to almost all the dishes from Idly, Dosa to Parathas Roties, and all Rice preparations.

CHUTNEYS CAN BE MADE IN A NUMBER OF WAYS AND IN A NUMBER OF COMBINATIONS OF
INGREDIENTS.
                                                 
           
LET US SEE THE NUTRITIONAL BENEFITS OF RAW TOMATOES.
  • It has a good amount of vitamins, hence it is a good ANTI-OXIDENT.
  • It has a good amount of B-Complex vitamins, such as B6, Thiamin & Niacin-FOR RED BLOOD CELLS
  • It has vitamin K, which helps in the CLOTTING OF BLOOD.
  •  RAW TOMATO. is rich in minerals, such as Potassium, phosphorous, Iron, Manganese, and Magnesium useful for BLOOD, MUSCLE, AND BONE HEALTH.
  • It has Fiber and BOOSTS IMMUNITY. 

RAW TOMATO CHUTNEY:-

Today, the HERO of this chutney is  RAW TOMATO.

  • So, we can say that using raw tomato for chutney is a GOOD OPTION. Along with it, we are also using Groundnuts or Peanuts which again a good source of healthy fat, protein, fiber, and essential vitamins
  • Let us now see the ingredients needed for this HEALTHY RAW TOMATO CHUTNEY.
INGREDIENTS

  1. Raw tomatoes-4 in number
  2. Peanuts-2 tablespoons
  3. Green chilies-4-5 in numbers
  4. Ginger-1 inch piece
  5. Garlic-4-5 cloves
  6. Coriander leaves-small bunch
  7. Curry leaves-8-10 numbers
  8. Table salt-3/4 tea spoon or according to taste.
  9. Oil-1/2 tablespoon (for roasting green chilies).
PREPARATIONS NEEDED FOR MAKING RAW TOMATO CHUTNEY
  • Take a frying pan and on low flame roast the Peanuts till the skin starts separating and smells good.
  • Remove on a plate and let it cool to separate the skin.

  • Wash the Tomatoes and chop them roughly, into small pieces.
  • Now in the same pan add 1 /2 tablespoons of oil and heat on low flame.
  • Add Green Chilies, Chopped Ginger, and Garlic cloves, and saute.
  • Now add chopped Raw Tomato and saute for 1 minute.

  • Cover and cook the Tomato for about 2 mts.

  • Put off the flame.

  • Let it cool completely.
METHOD OF GRINDING CHUTNEY
  • Take a mixer grinder jar and put all the ingredients i.e.Tomato, Roasted Peanuts, Green chilies.  Ginger pieces.Garlic cloves. Coriander leaves, Curry leaves, and Salt.

  • Grind them to a little coarse paste.

  • CHUTNEY IS READY.
  • Transfer to a bowl.
FOR GARNISHING

  1. Oil-1 tablespoon
  2. Urad dal-1 tablespoon
  3. Red chilly-1 number
  4. Curry leaves-6-8 in number
  5. Mustard seeds-1 teaspoon
  6. Asafoetida (hing)-1 peanut size
METHOD OF GARNISHING RAW TOMATO CHUTNEY
  • Take a small fry pan and heat 1 tablespoon oil in it, at low flame.
  • Now add 1 teaspoon of mustard seeds and let it crackle.
  • Add Hing and  Urad Dal.

  • Add Broken Red Chilly to the pan.
  • Add Curry leaves also.

  • When Urad dal becomes golden in color, put off the flame and put the hot garnishing on the chutney.

 MINT-CORIANDER CHUTNEY
YES, FRIENDS, THIS IS A VERY GOOD AND HEALTHY COMBINATION OF CHUTNEY.
Here we are using 2  types of green leaves: MINT LEAVES AND CORIANDER LEAVES (HERBS)
As both are GREEN in color they have chlorophyll which is very good for HEALTH.
NUTRITIONAL BENEFITS OF MINT LEAVES:
  • This aromatic LEAF HAS a TYPICAL SMELL AND TASTE.
  • It is gut-friendly because it helps to relax the muscle of the abdomen and thus relieves  GASTRO INTESTINAL TRACT ISSUES, AS INDIGESTION, IRRITABLE BOWEL-SYNDROME, ABDOMINAL PAIN, AND FLATULENCE.

  1. Coriander leaves-1 a big bunch
  2. Mint leaves-1 medium bunch
  3. Green chilies-5-7 in number
  4. Lemon juice-1 medium size lime
  5. Garlic cloves-8-10 in numbers
  6. Ginger 1.5-inch piece
  7. Sev-a handful(anyone -plain sev, or aloo bhujia)
  8. Roasted Jeera powder -1 teaspoon
  9. Black salt-1 teaspoon
  10. Table salt-1/2 teaspoon
  11. Water-1/4 cup to grind.
METHOD
  • The method of preparing this mint-coriander chutney is very easy.
  • Put all the ingredients together in a blender or a mixer-grinder jar and blend them together to a paste.

  • Taste it and correct the taste, if you need salt or lime.

NOTE: NO GARNISHING IS DONE FOR THIS CHUTNEY.  AS IT IS USED FOR SANDWICHES, CHATS, WITH SAMOSAS AND PAKORAS ETC.
