KHATTA DHOKLA IS A GUJRATHI BREAKFAST DISH, commonly made in almost all homes.
KHATTA DHOKLA  is almost similar to IDLY of  KARNATAKA. Ingredients are almost the same ie, In both the dishes Rice and Urad dal, is used. But the form is different.
IN IDLY, WE HAVE TO SOAK, GRIND THE BATTER AND THEN FERMENT AND USE. WHEREAS IN DHOKLA WE USE RICE FLOUR AND URAD DAL FLOUR, SO NO QUESTION OF SOAKING, ONLY MIXING AND FERMENTING.
In short, Dhokla is much Easier and Quicker to make and is cooked in Steam so very Healthy Dish. It is very Soft in Structure and  Easily Digestible.
It can be a very good choice as BREAKFAST for all and can easily be carried in a Lunch box. Let us see how to make SUPER SOFT AND SPONGY KHATTA DHOKLA.

INGREDIENTS FOR MAKING KHATTA DHOKLA

  1. Rice flour-1.5 cups
  2. Urad dal flour-1/2 cup
  3. Curds-1/4 cup to 1/2 cup
  4. Green chilies-4 numbers.
  5. Dil leaves-1/2 cup
  6. Table salt-1  teaspoon
  7. Pepper powder-1 teaspoon
  8. Oil-1 tablespoon
  9. ENO FRUIT SALT-1 small pkt.(only in cold weather)
  10. Warm water-2 to 2 and 1/2 cups

PREPARATIONS NEEDED TO MAKE  KHATTA DHOKLA

  • Take a mixing bowl.
  • Add sifted Rice flour and Urad dal flour to it.
  • Add Curds, Salt, Chopped Green chilies and Chopped Dil leaves to the bowl.
  • Now with the help of a whisk, mix all the ingredients nicely.

  • Now gradually add warm water and stir in a circular motion to combine all the ingredients uniformly, so that no lumps are formed.

  • The consistency should be like a thick Dosa batter.

  • Now keep it covered, in a warm place for 8-10 hours or overnight.

METHOD OF MAKING KHATTA DHOKLA

  • Take an IDLY COOKER or a STEAMER or a PRESSURE COOKER or a RICE COOKER.
  • Put water in the outer pan as you put it for steaming. (1.5-2 glasses)
  • Keep it to a boil on medium flame.

  • Now grease the plates in which you want to make DHOKLAS.

  • Now to the fermented batter add Eno fruit salt and 2 teaspoons of water on it.

  • You will see the reaction, in the form of foam rising.

  • Now mix all very light-handedly, so that the air bubbles do not set back.

  • Immediately pour the batter onto the greased plates and keep to steam, covered for 10-15 Mts.

  • After 15 mts, check whether DHOKLAS are cooked properly.

  • Now cool and cut the square or diamond-shaped pieces.

IT TASTES BEST WITH CORIANDER CHUTNEY
INGREDIENTS FOR CORIANDER  CHUTNEY

  1. Freshly grated coconut-1 cup
  2. Coriander leaves-1 cup
  3. Green chilies-4-5 numbers
  4. Lemon-1 number
  5. Ginger-1 inch piece
  6. Garlic cloves-5 in numbers
  7. Sugar-1 teaspoon
  8. Table salt-1/2 teaspoon
  9. Water- to grind chutney
METHOD TO MAKE CHUTNEY
  • Put all the ingredients in a blender and make a little coarse chutney. Use enough water to grind the chutney.
