INGREDIENTS FOR MAKING KHATTA DHOKLA

- Rice flour-1.5 cups
- Urad dal flour-1/2 cup
- Curds-1/4 cup to 1/2 cup
- Green chilies-4 numbers.
- Dil leaves-1/2 cup
- Table salt-1 teaspoon
- Pepper powder-1 teaspoon
- Oil-1 tablespoon
- ENO FRUIT SALT-1 small pkt.(only in cold weather)
- Warm water-2 to 2 and 1/2 cups
PREPARATIONS NEEDED TO MAKE KHATTA DHOKLA
- Take a mixing bowl.
- Add sifted Rice flour and Urad dal flour to it.
- Add Curds, Salt, Chopped Green chilies and Chopped Dil leaves to the bowl.
- Now with the help of a whisk, mix all the ingredients nicely.
- Now gradually add warm water and stir in a circular motion to combine all the ingredients uniformly, so that no lumps are formed.
- The consistency should be like a thick Dosa batter.
- Now keep it covered, in a warm place for 8-10 hours or overnight.
METHOD OF MAKING KHATTA DHOKLA
- Take an IDLY COOKER or a STEAMER or a PRESSURE COOKER or a RICE COOKER.
- Put water in the outer pan as you put it for steaming. (1.5-2 glasses)
- Keep it to a boil on medium flame.
- Now grease the plates in which you want to make DHOKLAS.
- Now to the fermented batter add Eno fruit salt and 2 teaspoons of water on it.
- You will see the reaction, in the form of foam rising.
- Now mix all very light-handedly, so that the air bubbles do not set back.
- Immediately pour the batter onto the greased plates and keep to steam, covered for 10-15 Mts.
- After 15 mts, check whether DHOKLAS are cooked properly.
- Now cool and cut the square or diamond-shaped pieces.
- Freshly grated coconut-1 cup
- Coriander leaves-1 cup
- Green chilies-4-5 numbers
- Lemon-1 number
- Ginger-1 inch piece
- Garlic cloves-5 in numbers
- Sugar-1 teaspoon
- Table salt-1/2 teaspoon
- Water- to grind chutney
- Put all the ingredients in a blender and make a little coarse chutney. Use enough water to grind the chutney.
- YUMMY, SPICY, TASTEY CORIANDER CHUTNEY IS READY TO SERVE WITH DHOKLA
- serve hot with this chutney
