GROUNDNUT CHUTNEY POWDER. Is one of the famous chutney powders of NORTH KARNATAKA.
It is a combination of jowar roti and brinjal curry. It is a very SPICY, a LITTLE CRUNCHY, and very yummy chutney powder having the flavors of roasted groundnuts, curry leaves, garlic, and red chilies, and is little sour and sweet with some spices.
The HERO of this recipe is Ground nuts also called peanuts, ONE OF THE HEALTHIEST INGREDIENTS, which is used in this recipe.
GROUNDNUT is rich in PROTEIN, FAT, FIBER, and Various Nutrients.
GROUNDNUTS help in lowering blood sugar and improving brain function as it has vitamin B3 and Niacin, and vitamin C to boost immunity.
It prevents ACNE by preventing Sebum production.
So, this Chutney powder can be very safely consumed and enjoyed, as it is a dry powder, it can be carried anywhere during the journey.

- Groundnuts or peanuts-1 cup
- Red chilies-10-12 in numbers
- Curry leaves-20-25 leaves
- Coriander seeds-1 tablespoon
- Tamarind-1/2 lemon size
- Jaggery-1 teaspoon
- Garlic-10 cloves
- Table salt-3/4 teaspoon
- Turmeric powder-1/2 teaspoon
- Asafoetida (hing)-1 pea nut size
- Oil- 1 teaspoon
PREPARATION NEEDED FOR GROUNDNUT CHUTNEY POWDER
- Firstly heat a pan on low flame.
- When hot start dry roasting the peanuts. Roast till it starts leaving its skin and starts giving a nice aroma.
- Remove from pan and let it cool.
- Now again to the same pan, on low flame, roast curry leaves, garlic cloves, and tamarind pieces.
- Remove on a plate.
- Again on the same pan, on low flame add Oil, Hing, and Red chilies and roast till the chilies are crispy and swell.
- Now all the ingredients are ready, let it cool completely.
METHOD OF GRINDING GROUNDNUT CHUTNEY POWDER
- Take a mixer jar.
- Put Red chilies, Coriander seeds, Curry Leaves, Salt, Tamarind, Jaggery, Garlic cloves, Hing, and Turmeric powder in the jar
- Run the mixer to grind the chutney powder to a coarse powder.
- Now add the roasted groundnut and turn the nob of the mixer in reverse direction for a few seconds to get a coarse powder.
- To add extra color to the Ground nut Chutney Powder, add Kashmiri Red chilly powder.
- YUMMY GROUNDNUT CHUTNEY POWDER IS READY.
