KOTHIMBIR VADI OR CORIANDER FRITTERS is one of the famous MAHARASHTRIAN SNACK made very commonly for breakfast. It is very Tasty, Spicy, Crispy on the outside, and soft on the inside. This dish is made in many ways and with different combinations of ingredients. The basic ingredients are GRAM FLOUR (BESAN) and CORIANDER LEAVES, with some spices. This VADI can be made and consumed in three ways.
1) STEAMED KOTHIMBIR VADI
2) SHALLOW FRIED VADI AND
3) DEEP-FRIED VADI
So, those who are avoiding oily or deep-fried dishes can opt for steamed and shallow-fried FRITTERS.
Let us have a look at the ingredients needed for KOTHIMBIR VADI
- Gram flour or Besan-1 cup
- Rice flour-1 table spoon.
- Fresh Coriander leaves-2 cups (washed and finely chopped)
- Plain water-2 cups
- Green chilies-6-8 finely chopped
- Ginger-1 inch piece (grated)
- Lemon-1 medium-sized (squeezed)juice or 1 tablespoon yogurt (Curds)
- Oil-1.5 table spoon. (for frying extra)
- Table salt-1 teaspoon
- Red chilly powder-3/4 teaspoon
- Turmeric powder-1/2 teaspoon
- Garam masala-3/4 teaspoon
- Sesame seeds (til)-1 tablespoon (roasted) or can add roasted poppy seeds instead.
- Groundnut powder (roasted)-2 tablespoon
- Sugar-1 teaspoon (optional)
preparations needed for making kothimbir vadi
- Take a big mixing bowl.
- Put a strainer or a sieve on it.
- Put 1 cup of Gram flour, 1 tablespoon of rice flour, and 1 teaspoon salt to it and sieve.
- This process will remove lumps if any in the flour.
- Now take 1 cup of water and slowly add to the bowl stirring with a whisk to make a smooth mixture of Besan and rice flour
- Now add Red chilly powder, Turmeric powder, Garam masala, Oil, Grated ginger, and chopped green chilies.
- Combine all of them nicely.
COOKING METHOD:
- Dry roast 2 tablespoons of ground nuts and remove the skin. When cool grind very coarsely.
- Now roast sesame seeds in a frying pan on a low flame till it starts puffing and changing color and aroma.
- Roast once again the ground nuts. Remove from pan.
- In the same pan add 1 cup of water and 1 teaspoon of oil and 1 teaspoon sugar.
- Let it boil. Now slowly add the gram batter mix to the pan stirring continuously to avoid lump formation.
- The gram flour starts cooking and forms a smooth paste. Cook till all the batter, converts into a smooth lump, leaving the pan surface put of the flame.
- At this stage add roasted sesame seeds and the ground nuts powder.
- Now is the time to add fresh chopped Coriander leaves and mix.
- Take a container or a plate or you can even use a cake pan.
- Smear oil on its surface, so that after it is cooked, it leaves the surface easily without sticking.
- Now put the cooked mix in it and pat it evenly with the help of a spatula.
- Keep ready an Idly cooker or a steamer, with water, for steaming the cooked mix once more on medium flame.
- keep covered for steaming for about 10 mts.
- Put off the flame.
- leave it to cool and set.
- When it cools you can remove it reversing on a plate.
- Now cut into square pieces.
- THIS IS THE BASIC STEAMED KOTHIMBIR VADI OR CORIANDER FRITTERS WHICH CAN BE RELISHED WITH TOMATO SAUCE OR KETCHUP
FOR MAKING SHALLOW FRIED KOTHIMBIR VADI:
- Keep a shallow fry pan or a skillet on a medium flame to heat.
- Add 2-3 tablespoon of oil.
- When oil heats, arrange the fritters on it and let it become crisp on one side, reduce flame.
- After 1 minute flip it on the other side.
- Let this side also cook in the same way.
- SHALLOW FRIED HEALTHY KOTHIMBIR VADI IS READY TO EAT WITH TOMATO SAUCE OR PODEENA CHUTNEY
FOR MAKING DEEP-FRIED KOTHIMBIR VADI:
- Keep a deep fry pan.
- Heat and add enough oil for deep frying the fritters.
- When the oil is hot enough drop the steamed fritters one by one. (6-8)
- When one side is done, flip it on the other side.
- In this way cook on both sides till golden color appears on the surface and is crispy
- Remove on a paper towel.
DEEP-FRIED YUMMY, CRISPY AND SPICY KOTHIMBIR VADI IS READY.
