YES FRIENDS, it is a very EASY, YUMMY, CRISPY, AND MOUTH MELTING COOKIES. 
 
It can be made very easily with a few ingredients available in every house in a very short time. Especially kids are very interested in making these Cookies. In this lockdown period, it is always safe to make whatever you like at home.
 
BUTTER AND COCONUT COOKIES are basically made with a combination of Maida, Fat, sugar, and some coconut. 
 
FOR ENHANCING THE TASTE AND TO BRING VARIATIONS, CASHEWS, PISTACHIO, CARDAMOM, TOOTI FRUITY DRY COCONUT, AND CHERRY ARE ADDED.

INGREDIENTS

  1. All-purpose flour-100 grams
  2. Un-salted butter-60 grams
  3. Powdered sugar-50 grams
  4. cardamom-2 numbers
PREPARATIONS NEEDED FOR BUTTER COOKIES
  • Powder the sugar with cardamom in a mixer grinder.
  • Take a deep mixing bowl and put butter at room temperature.
  • Now add powdered sugar to it.

  • Beat (cream) with a whisk or electric hand blender till you get shiny fluffy and creamy stuff.

  • Now sieve the Maida.

  • Start mixing it with the butter-sugar cream mix.

  •  Make a dough and then divide the dough into small portions.

  • Shape the Bikkies with your hand and place them on a greased aluminum foil (on a baking tray)at 1.5 inches apart (distance in between).
BAKING PROCESS OF BUTTER COOKIES:
  • Preheat the oven to 150 * C for 10 mts.
  • keep the tray in the oven to bake for about 15-18 mts.
  • Do not overcook, it becomes hard if done.

  • Take out of the tray, cool, and then store in an air-tight container.

Now let us see the ingredients needed FOR MAKING COCONUT COOKIES

INGREDIENTS

  2. Un-salted butter-60 grams
  3. Powdered sugar-40 grams
  4. cardamom-2 numbers
  5. Coconut powder-40 grams (desiccated coconut)
  6. Poppy seeds-1 teaspoon
  7. Red cherries-3 numbers.
PREPARATIONS NEEDED :
  • Powder the sugar with cardamom in a mixer grinder.
  • Take a deep mixing bowl and put butter at room temperature.

  • Now add powdered sugar to it and beat (cream) with a whisk or electric hand blender till you get shiny fluffy and creamy stuff.

  • Add coconut powder and poppy seeds to the above mix.

  • Now add sieved maida to the mix.
  • Knead well until it blends into a pliable dough.

  • Make walnut-sized balls and place it an inch apart on a greased aluminum foil (on a baking tray).

  • Cut the cherry into small pieces and keep one piece on each cookie.
