CRISPY RICE CHAKLI, YES IN THE FESTIVALS OF GOWRI-GANESHA, IS THE MOST COMMON SNACK MADE IN ALMOST ALL HOMES IN SOUTHERN INDIA. Again the methods are different, ingredients are different, time taken to make differs so the taste also changes accordingly. The main ingredient used in RICE CHAKLI or the Hero of the CHAKLI is of course RICE. OTHER INGREDIENTS USED ARE; BLACK GRAM OR URAD DAL, PUFFED DAL OR FRIED GRAMS &GREEN GRAM DAL OR MOONG DAL
In the olden days, the preparation time needed was too much for this particular snack.
Firstly rice and urad dal had to be washed separately, then spread on a cloth and dried in the shade, then roasted separately and after cooling, milled to get the flour mix.
But now we have found an easier method of making CRISPY RICE CHAKLI.
INGREDIENTS FOR MAKING RICE CHAKLI
- Rice Flour-2 cups
- Urad Dal -1/2 cup
- Cumin seeds-1 tablespoon
- Gingelly seeds(white til)-1 tablespoon
- Table Salt-1 tablespoon
- Asafoetida (hing)-peanut size
- Oil-2 tablespoon
- Water-250 to 300 ml or according to need.
- Heat a frying pan, on a low flame.
- When hot add urad dal and dry roast dal till slightly golden in color.
- Now take a Pressure Cooker and keep it to cook adding 2 times water (of the dal you add).
- Give 5-6 whistles to the cooker.
- Let it cool by itself and then grind in a mixer to a smooth paste. Do not add water while grinding.
PREPARATION OF THE DOUGH FOR RICE CHAKLI
- Take a mixing bowl or a big parath (big mixing plate).
- Put 2 cups of Rice Flour on the plate.
- Add dal mix, salt, cumin seeds, til, and hing.
- Mix all the ingredients well.
- Heat 2 tablespoons Oil and add to the flour mix.
- Now start adding water slowly and simultaneously mix the flour to a smooth dough. ( not too tight)
- Keep it covered till Oil heats.
- Take chakli mold, and smear oil from inside. (wherever the dough comes in contact )
- Make logs out of the dough and put them in the mold.
- On a nonstick surface, make chakli with the help of mold.
