INGREDIENTS
- Rice flour-1.5 cups
- Fresh coconut -1/2 cup grated
- Onions-2 numbers finely chopped
- Green chilies-4-5 numbers finely cut
- Coriander leaves-handful finely chopped
- Cumin(jeera) seeds-1 teaspoon
- White sesame(til)seeds-1 tablespoon
- Salt -1 teaspoon
- Water -to knead the dough(hot)-1 cup or as required
- Oil -3 tablespoons (to be used while making AKKI ROTTI)
METHOD OF MAKING AKKI ROTTI
- Firstly, grate the coconut, cut the onions, green chilies, coriander leaves, and hot water.
- Take a big mixing bowl or big plate.
- Put rice flour, salt, cumin seeds, sesame (til) seeds, grated coconut, cut onions, green chilies, and coriander leaves.
- Mix all the ingredients nicely so that the water released from the onions after salt and chilies are mixed, gets infused with the rice flour.
- Now add water in little quantities and start kneading the flour to a soft spreadable dough.
- (Do not add more water because onion has a tendency to release water even after it is in the dough)
MAKING AKKI ROTTI DIRECTLY USING A DOSA PAN
- Take a Dosa pan, and smear oil on it using a brush.
- Take an orange-sized ball of dough and keep it in the center of the tawa.
- Now with the help of your fingers pat and spread it evenly on the tawa to make a round and thin ROTTI.
- Make a small hole in the center and put little oil.
- Keep on a medium flame and cover.
- If you want to make crispy cook on a low flame adding a little more oil.
- No need to flip and roast the other side(If you have made a thin ROTTI)
- Take a nonstick paper and keep it on a flat surface.
- Smear oil liberally, while using for the first time.
- take an orange-sized ball and keep it in the center.
- Start patting with your fingers in a circular motion to make a round.
- If the dough sticks to your fingers, you can wet your hands with water or oil.
- Heat a tawa.
- when done take the paper and flip it on the tawa.
- Now with the help of a spatula try to put ROTTI on the hot pan.
