AKKI ROTTI is especially for my NORTH INDIAN FRIENDS, this is because it is a very common SOUTH INDIAN BREAKFAST.
This is called AKKI ROTTI as it is rice-flour-based FLATBREAD. AKKI means rice. Rotti is like FLAT BREAD OR PANCAKE.
The main ingredient of AKKI ROTTI is RICE FLOUR, which is combined with different spices herbs, onions, leafy vegetables, salt, and water.
Let us make a very simple, but very healthy, crispy adorable dish.

INGREDIENTS
- Rice flour-1.5 cups
- Fresh coconut -1/2 cup grated
- Onions-2 numbers finely chopped
- Green chilies-4-5 numbers finely cut
- Coriander leaves-handful finely chopped
- Cumin(jeera) seeds-1 teaspoon
- White sesame(til)seeds-1 tablespoon
- Salt -1 teaspoon
- Water -to knead the dough(hot)-1 cup or as required
- Oil -3 tablespoons (to be used while making AKKI ROTTI)
METHOD OF MAKING AKKI ROTTI
- Firstly, grate the coconut, cut the onions, green chilies, coriander leaves, and hot water.
- Take a big mixing bowl or big plate.
- Put rice flour, salt, cumin seeds, sesame (til) seeds, grated coconut, cut onions, green chilies, and coriander leaves.
- Mix all the ingredients nicely so that the water released from the onions after salt and chilies are mixed, gets infused with the rice flour.
- Now add water in little quantities and start kneading the flour to a soft spreadable dough.
- (Do not add more water because onion has a tendency to release water even after it is in the dough)

To give shape, there are many methods.
1)Making on a plantain leaf.
2)Greased foil
3)On the dosa pan
4)we also get a binding sheet (which has a nonstick surface)
Let us see two methods out of this. (3 and 4)
MAKING AKKI ROTTI DIRECTLY USING A DOSA PAN
- Take a Dosa pan, and smear oil on it using a brush.
- Take an orange-sized ball of dough and keep it in the center of the tawa.
- Now with the help of your fingers pat and spread it evenly on the tawa to make a round and thin ROTTI.
- Make a small hole in the center and put little oil.
- Keep on a medium flame and cover.
- If you want to make crispy cook on a low flame adding a little more oil.
- No need to flip and roast the other side(If you have made a thin ROTTI)
AKKI ROTTI IS READY TO SERVE. SERVE HOT WITH CHUTNEY.
USING A NONSTICK PAPER
- Take a nonstick paper and keep it on a flat surface.
- Smear oil liberally, while using for the first time.
- take an orange-sized ball and keep it in the center.
- Start patting with your fingers in a circular motion to make a round.
- If the dough sticks to your fingers, you can wet your hands with water or oil.
- Heat a tawa.
- when done take the paper and flip it on the tawa.
- Now with the help of a spatula try to put ROTTI on the hot pan.
Let it roast for 2 mts and when crispy serve hot
