INGREDIENTS needed for palak fritters

- Fresh palak leaves-1big bunch
- Gram flour (besan)-1 cup (200gms)
- Rice flour -1/2 cup
- red chilly powder-1 teaspoon or more(according to taste.)
- Fennel seeds(saunf)-1 teaspoon
- Carom seeds(ajwain)-1 teaspoon
- Roasted cumin powder-1 teaspoon
- Turmeric powder-1/2 teaspoon
- Table salt-1 level teaspoon(palak needs less salt)
- Water-1/2 cup or even less.
METHOD of making batter for the palak fritters
- Take a mixing bowl.
- Add all ingredients except palak and mix nicely.
- Start adding water slowly and mix with a whisk or a spatula, so that no lumps remain.
- Be sure it is a thick paste.
- Take fresh palak and wash it, wipe it, or spread it so that extra water dries.
- Now chop it roughly into small strips.
- Now add roughly chopped palak and mix with the paste.
- Pakoda batter is ready.
METHOD OF FRYING PALAK FRITTERS
- Now heat a deep fry pan.
- Add enough oil to dip the pakoda completely while frying.
- When it is pretty hot drop the batter in hot oil with the help of a small spoon.
- little at a time till the surface of the oil is 80% covered.
- After frying for a few seconds, move it so that the other sides also get cooked.
LET IT GET GOLDEN IN COLOR. Put it on a paper towel before serving to remove extra oil if any
