HEALTHY MASALA PUFFED PURI (MURMURA)

This masala puffed puri is light, and crispy, and also has a crunch of dry coconut and peanuts.
This is made in different methods. This may remind you of the churmuri that you get on the train, where they add carrots, onions, tomatoes, and different varieties of chutney with parmal or mumura.
Masala puffed puri made in this method need not be consumed immediately but this dish can be preserved and remains fresh and crispy for a longer time.
we roast groundnuts, green chilies, curry leaves, dry coconut slices, salt, hing, and turmeric with little oil to coat the spices to puri or murmura.

INGREDIENTS for masala puffed puri

  1. Puffed rice(murmura)-1 big bowl (250gms)
  2. Groundnuts-3/4 cup
  3. Dry coconut(copra)-1/2 cup grated as thin slices
  4. Green chilies-3 to 4 chopped finely
  5. Curry leaves-25-30 leaves finely chopped
  6. Oil-4 to 5 tablespoon
  7. Turmeric powder -3/4 teaspoon
  8. Asafoetida (hing) 3/4 teaspoon
  9. Mustard seeds -1 teaspoon
  10. Table salt-1 teaspoon

PREPARATION TO BE DONE for masala puffed puri

  • Firstly check puffed rice. It should be crispy and if you break it, should become powder.
  • If it is not, in a big kadhai(deep fry pan) dry roast at low flame till it becomes crispy. Keep aside.
  • Roast the groundnuts and coconut(copra) separately on low heat till it is crispy. (without oil)
METHOD
  1. Take a big kadhai(deep fry pan) or a cooker.
  2. Put 5 tablespoons of oil, and heat it.
  3. When hot put mustard seeds, and let it crackle.
  4. Add asafoetida (hing)to it.
  5. Now add green chilies and curry leaves and saute for a few seconds.
  6. Now add dry roasted coconut scrapings and groundnuts and saute for a few seconds.
  7. Add turmeric to it and mix.
  8. Lastly, add salt and mix.

       Now add the puffed rice to that and mix. All the time, the flame should be low. Mix nicely.

 VARIATIONS  OF MASALA PUFFED PURI
METHOD;
  1. You can use red chilly powder, instead of green chilly. The rest will be the same.
  2. Garlic cloves can be peeled and put in the oil with curry leaves (optional).
  3. Some people mix oil, Red chilly powder, salt, hing, turmeric, and 1 tablespoon of roasted chana(fried grams)powder together with puffed rice and squeeze a lemon juice.
  4. A dish called churmuri is also made, adding onion, tomato, spicy fried mixture, fried peanuts, tam chutney, pudina chutney chat masala, etc.
TRY THEM ONE BY ONE, AND RELISH DIFFERENT TASTES 
NOTE; Puffed rice is known by different names as, MURMURA,  LAI, PARMAL, AND
KADALEPURI(in kannada).
They have different tastes, some are salted and some are without salt.
If you use salted one reduce the quantity of salt used in the recipe
Always store in an airtight container to retain crispiness.
